How are we, friends? Fall in Denver is nothing short of magical. Happy almost Thanksgiving!

Sweet Charlie Grey is already five months old. I feel like I'm gonna blink and he'll be eating!
Knowing this is our last kiddo, I've really been able to be present with him and fully enjoy every phase versus wishing it away.
Food lately isn't wildly creative, but it's still a huge source of comfort to me. I get a lot of joy and purpose out of nourishing our family, even though there are many days where the last thing I want to do is think about dinner.
These really are the days!
Lovely Meals
I can't stop with the chocolate pumpkin muffins that taste like cake! I just added a notes on how to make them vegan, too.
I love roasting delicata squash because you don't have to peel it! I used this parmesan roasted squash recipe (no lemon zest) and it was incredible. I legit ate half the pan when it came out of the oven...
We made some delish breakfast burritos to freeze for Jeff to take to work since he leaves so early. The pickled jalapeños and salsa verde added so much. I love these local whole wheat tortillas. We also dropped some to our close friend who'd just had a baby!
I picked up some cookies and old-fashioned from Devil's Food Bakery when we had a friend in town...I just die for a good chocolate chip cookie.
Poke bowls from Kiki's Fresh Bowls with salmon, avocado, mango, edamame, greens, cilantro, green onion and truffle yuzu ginger dressing.
Eggs and French toast for Sunday breakfast (4 big slices sourdough bread in 2 whisked eggs, ½ cup almond milk, splash maple syrup, lots of cinnamon, 1 tsp vanilla extract, ½ tsp almond extract).
I made a batch of my banana oatmeal raisin cookies for easy snacks and breakfasts for Max.
Pumpkin overnight oats snack with raspberries and cacao nibs for crunch. I crave eggs and avocado toast in the morning lately so oats end up filling the snack gap!
Chocolate and coconut ice cream from Kilwin's in Naples totally hit the spot.
A somewhat uninspired but realistic I-need-something-very-easy lunch: Dr. Praeger's veggie burgers with this delish jalapeño miso dressing I found on sale at Whole Foods, avocado, and jarred pickled jalapeños.
A hodgepodge lunch of leftover roasted sweet potatoes and greens, rotisserie chicken, feta, arugula, and more jalapeño dressing.
I've been making hot chocolate almost every afternoon. Sometimes I make my hot chocolate recipe and other times I fill my Nespresso frother with almond milk, maple syrup, cocoa powder, salt and vanilla and let it whirl. Hot frothy hot cocoa in minutes!
Sonny's falafel pitas with zhug and tahini are the absolute bomb! I cannot even describe how light and crisp this falafel was. Five stars!
Salad with leftover pasta, romaine, kalamata olives, sun-dried tomatoes, spinach, feta, and Mediterranean salad dressing.
I've been adding leftover pasta to salad a lot lately and it's so good!
Baked breaded cod with Dijon, roasted potatoes and green beans, salad, and leftover Sicilian pepperoni pizza from Dough Counter.

- I love our new non-stick pan so much. It's currently $20 off!
- Good Moms Have Scary Thoughts: This is an awesome book for the new/struggling mom in your life. I recently gifted this to a friend and I know it meant so much!
- We make eggs every day and our current non-sick is not doing the job. I've decided on this ceramic Caraway fry pan!
- I just finished The 5 Star Weekend and I honestly loved it, as I do everything Elin writes. She can do no wrong.
- Get access to my dear friend Simi's wonderful, soul-nourishing Unmeasured online barre workouts for just $199 a year (that's only $16 a month!). This is the best sale of the year!
- I want these fuzzy insulated Sorel boots for a warm winter boot. They're just calling my name!
- Peppermint white chocolate protein bars are my current must-have festive snack. I crave them!
- Dino egg bath bombs are a huge hit with Max right now!
- I got Where Do You Poop for some potty training laughs but even now that Max is potty trained, this book is always a top pick.

I appreciate that you still create recipes that are plant based, even though you have been eating meat again. I was plant based, started eating meat again, and am now going back to eating plant based. I just don't feel as good as I used to. Though I really think it's the dairy that is getting to me. But I know that everyone is different in what works for them. I just love being able to come to your website and find plant based meal ideas. My husband loved your lentil walnut taco meat recipe 🙂 You know it's good when the meat loving man enjoys it! Lol
