Hi, friends! How are we doing?! I cannot believe our little Charlie man is almost a year old. Every year older I get, I'm utterly bamboozled about where the time goes.
I am looking SO forward to summer! We're heading to San Diego in a couple weeks to hit Lego Land, the zoo and Sea World. Our first vaca as a family of four!
We redid our entire yard and are soaking up so much fab outside time. We planted lots of veggies in our raised beds and are crossing our fingers for little sprouties. Max loves to water everything in the morning and Charlie loves to play with our wind chime.
Life is good <3
Lovely Meals
I must begin with my favorite ever chocolate zucchini cake that I can't stop making!
Speaking of zuccs, you made my new zucchini lasagna yet? It's seriously divine.
Easy lunch idea: bagged chopped romaine with caesar dressing, canned tuna, leftover chopped baked potato, cukes and tomatoes. Anyone else obsessed with limoncello La Croix?
Sweet potatoes for quick lunch sides! Slice in half (more more), rub with olive oil and kosher salt. Bake at 400F cut-side down for 45 minutes and you get the nice caramely brown notes!
This time of year, I crave my chocolate blueberry smoothies like no other for an afternoon snack (ideallt with O cereal, cacao nibs, and pb on top).
My absolute favorite cold brew situation, which I usually have around noon. I've tried other soy milks but Silk's is perfection!
I made this super quick chicken enchilada situation for easy lunches. First I pour a jar of enchilada sauce and a cup (or less) of salsa in the Instant Pot. Add 4 chicken breasts and season liberally with salt, pepper and garlic.
Top with a can of drained black beans, a bunch of frozen corn and sliced bell peppers, and a can of diced green chiles. Cook for 10 minutes then quick release and shred chicken. Season with salt and hot sauce. Serve with guac and tortilla chips!
Yogurt bowl snacks with plain Greek yogurt, a spoonful of cacao, honey and vanilla. Top with strawberries and cacao nibs for crunch!
I haven't forgotten about you, lemon poppyseed bread. On repeat for snacks!
Fried eggs and the best oat flour waffles...my perfect Mother's Day breakfast.
Baked salmon with lemon, oregano, olive oil, garlic, salt and pepper (I get the big wild fresh piece from Costco) with grilled asparagus, microwave rice (we fly through this), and salad.
Really loved these gochujang turkey bowls with rice noodles for a fun, change it up dinner.
A gorg mezze platter at Boychik with a friend for dinner!
After enjoying chicken shawarma plates, we dug into the most insane pistachio ice cream with date molasses atop something crumbly and heaven-sent.
Things I'm Loving Lately
- This floral lace top is beautiful (and on sale!). I'm so happy with the fit and quality. I'm also living in this athletic dress for non athletic purposes, LOL.
- Hello Bluebyrd is my new favorite place for kid and baby stuff! They feature purpose-driven brands, all USA-made, everything is free shipping, and they donate 3 meals for every product sold. Wins all around! Max literally did this ocean life floor puzzle 12 times the day I gave it to him. Also obsessed with these blueberry jammies and this smiley hat!
- I got these new Sorel tennis shoes and I'm in love. Adorable and comfy--I walked all around NYC in them!
- Favorite frozen treats right now: KIND peanut butter dark chocolate frozen bars, Johnnypop chocolate strawberries and cream, Yasso cookie dough bars,
- I got these gorgeous Spring & Mulberry date-sweetened chocolate bars at Poppy's in NYC and just found them on Amazon. They feel like such a special, pretty treat!
- My new favorite wireless bra ever after breastfeeding and definitely needing some help in the shape and lift department if you know what I'm saying.
- My favorite mineral sunscreen for us and the kids!
- Currently reading the third book in ACOTAR and loving the series so much. I'm also listening to The Women, which I adore (anything by Kristin Hannah).
Have the best week!
