Hey friends! June is off to a fabulous (and steamy) start. My mom was in town last week and we had so much fun exploring with the boys while Jeff was in Austin with friends.
We've been doing tons of grilling and spending time outside hiking, playing at the park, and in the sprinkler....ya know, the June uge. Cheers to sweet summertime!

Delish meal and snack inspiration
A stunning (and filling!) summer breakfast: sourdough toast, half with avocado and half with Good Culture cottage cheese + tomatoes and dill, scrambled eggs with Aleppo pepper flakes, and juicy peaches.
These chocolate zucchini muffins are EVERYTHING! So divine with flaky salt.
We had our neighbors over for a cookout and it was so fun. I made Italian pasta salad (adapted from this recipe, but less cheese and banana peppers, and no olives nor chickpeas), my famous vegan broccoli salad, and healthy strawberry oatmeal bars for dessert!

If you haven't made my new quick creamy roasted red pepper pasta, you MUST! It's so incredible with shrimp.
I'm craving so much salad this summer! This one's inspired by my strawberry balsamic spinach salad but I did TJ's quick cook farro and some mixed nuts.
We just got a Mendocino Farms and their salads have really impressed me. This was the seasonal peach one with marinated goat cheese, honey-roasted almonds, pickled red onions, and shaved fennel, and farmhouse vinaigrette. Amazing!
Fresh batch of flourless PB banana bars for snacking. We've been doing lots of frozen KIND bars and chocolate chip cookie dough Yasso bars for dessert lately!
We can't get enough of this lightened up turkey lasagna with cottage cheese for dinner. Jeff's fave!
Fun summer dinner! Herby tahini grilled chicken and grilled veggies with walnut olive topping both from from The Mediterranean Dish Cookbook, plus TJ's quick cooking farro.
Rigatoni with this delish basil pesto, grilled chicken, and air friend zucchini and eggplant. So simple and really hit the pot!
I made this Mediterranean garlic shrimp with bell peppers when my mom was in town and she loved it! Served with Instant Pot basmati rice and salad.
I'm loving my refreshing strawberry chia pudding with Greek yogurt for afternoon snacks lately.
Divine mushroom walnut pizza for Friday Esther's from pizza night! The amount I look forward to not doing dishes is indescribable.

I should def include that! My kids get bites (exposure) of whatever we’re having alongside fruit with nut butter, cashews/pumpkin seeds, cheese, grilled cheese, quesadilla, pasta, peas etc!

Just tossed chopped zucchini and eggplant in EVOO, salt, pepper and garlic powder then added to air fryer basket and cooked on 375F (mine runs hot) til browned, tossing halfway. That’s how I cook everything in there 😆
