Lovely meals lately
This healthy gingerbread cake is a recipe I'm beyond excited about! A festive, must-make treat.
I've been craving vegetarian food the last couple weeks. Such a good reminder to listen to your body and embrace tastes evolving with the seasons! This was a big random bowl of leftovers: skillet marinara chickpeas, steamed broccoli with cheese, and air-fried eggplant with sumac.
We got this new griddle and it was so amazing making a full batch of Greek yogurt pancakes (I used half whole wheat flour) all at once!
Air-fried salmon over peanut noodles with spinach and bell peppers.
I've made these peppermint chocolate cookies three times already...we're obsessed. I found the recipe in Bon Appetit's magazine. Instead of white chocolate in the middle, I add chocolate chips then dunk in melted chocolate and sprinkle with crushed candy canes. AMAZING.
I keep frozen dough balls in the freezer for when the craving strikes! Here's the recipe.
I hosted book club this month and it was so fun. Everyone brought different cookies!
I made skillet cheesy chickpeas, sumac potatoes with yogurt tahini sauce, stuffed mushrooms, and an incredible arugula salad with fennel, cucumber, green olives, pistachios, parmesan, and a lemon shallot dressing. I need to post the recipe! (This is the serving platter.)
Random delish mid-morning snack combo: leftover overnight steel cut oatmeal mixed with Greek yogurt and honey, topped with blueberries, cacao nibs for crunch, and PB drizzle.
Flavorful veggie lunches that sit well in the fridge have been my jam. This bowl was curry roasted cauliflower and chickpeas with roasted sweet potatoes, basmati rice, crunchy lettuce, and an amazing jalapeño tahini sauce I can't wait to share soon!
Would you believe me if I said I eat fried eggs with avocado and/or peanut butter toast every single morning? It's all I crave! Lately a squeeze of lemon juice on the avo toast is a must.
Two Hands for brunch with girlfriends! I ordered the Chicken Harissa Bowl with slow-roasted chicken, lentils, greens, sweet potato, crunchy veggies, seeds, chili oil, harissa dressing and cilantro ranch. Yum!
Tortilla pizzas for me and the kids when Jeff was out of town (I baked at 425F for 5ish min). Good but was starving after and ate another dinner LOL.
This classic beef stew really hit the spot on a chilly Sunday night!
Things I'm Loving Lately
- I bought this air fryer last month (it's also a toaster oven) and it's easily the best appliance I've purchased in ages. We use it every day and it makes everything taste better! Plus it cooks SO FAST.
- What I got Jeff for the holidays: these comfy and functional slippers (I got the women's sandals when I hurt my back and they're life changing; I do not walk around the house without them), this half zip sweater (50% off), this sweater polo, these comfy work pants, and some locally made coffee mugs!
- I'm super into Brami's pickled lupini beans lately. I bought the bigger size at Whole Foods then ordered these little packs for easy on-the-go snacking. One pack has 9g plant protein and they're really tasty! I love their pasta, too.
- I got these adorable little velcro indoor/outdoor shoes since Charlie needs indoor shoes for his toddler program.
- These Spanx wide-leg pants are the best for when you can't muster the energy for jeans but also don't want to wear leggings/joggers. They're still on sale for $39 from $149!!
- I'm on a big matcha latte kick as my late morning/early afternoon warm bev when I don't want more coffee. I put milk, honey, and 1 tsp matcha right in my Nespresso frother (30% off) and it makes the perfect drink.
