Baby Max Asher is heeeeere!

He arrived with a splash on Wednesday, January 20th. I can't wait to tell you all about that special day and what the incredible first week of motherhood has been like, but I'll save that and all the adorable baby photos for his birth story post. We are so deep in love with our sweet boy!

Lovely Meals and Snacks
I made my tuna noodle casserole for dinner last week and it was divine. I'm trying to use up what we have in the pantry, and pasta, tuna, peas, and cashews tend to always be around!
Lemon no-bake bites...an oldie but a goodie! I forgot how amazing the flavor of these are, and they're so easy.
I roasted a bunch of sweet potatoes sliced up with olive oil, smoked paprika, chipotle powder, salt, garlic powder, and pepper plus some Brussels sprouts. Love them as a savory snack dipped in hummus!
Peanut noodles with broccoli. Such a delish and easy dinner. I didn't have cilantro but it was still fab. I added edamame and used these rice noodles.
Banana bread pancakes topped with blueberries and eggs on the side. Can't go a weekend without pancakes. Went back for a third.
Chopped apple with 2% Fage yogurt and tons of cinnamon. Sometimes I'll add nut butter. Great afternoon snack!
Dates with almond butter or peanut butter and sometimes chocolate. Mmmmm.
This butternut squash wild rice soup was an ideal way to use up all the squash from our CSA. I did an onion instead of leeks, ¾ cup wild rice, ¾ cup cashews, no kale, lentils instead of chickpeas and I add soy sauce at the end for a flavor boost.
Morning glory muffins for the win! I changed the recipe a bit based on what I had on hand and topped them with granola.
We've been doing spinach salads for dinner with Tilamook sharp cheddar, bell pepper, balsamic, olive oil, salt and pepper. Easier than prepping leaf lettuce since it comes washed!
Buttered sourdough snack with everything bagel seasoning. Mmmmm.
Fox in the Snow egg sandwich plus a blueberry galette to share. Dreamy!
In other news, I'm reading In Five Years and absolutely flying through it! Highly recommend. Music wise, I'm listening to this chill jam, "What Falling In Love Is For" on repeat.
