What's up, party people?!
I'm doing my best to keep a positive attitude and focus on sweet baby's arrival, but holy guacamole...have my limits been tested this month!
We've been without plumbing for a week due to a pipe issue, someone hit my parked car, I found out I can't have visitors while on bedrest at the hospital, no Thanksgiving with family, navigating COVID with our restaurants again...it's all felt like a continuous pile up on top of my nerves about vasa previa (more in this post) and the health of our baby boy.
I share this to be transparent with you all as always, but also to hopefully to comfort any mamas giving birth during COVID facing an entirely new set of challenges. You're not in this alone.
I know gratitude is the attitude in these times, so I'm really trying to maintain a high spirited state of mind. Having this online community has been so comforting, so thank you. Now let's talk eats!
Lovely Meals and Snacks Lately
The best vegetable soup with a whole grain English muffin topped with avocado and EBT spice.

All I wanted for dinner last night was pizza. We had tons of leftovers, but I listened to my cravings and it was everything I needed!
Love me a chocolate covered frozen nanner!
Lentil loaf with cranberry orange sauce, green bean casserole, and mashed sweet potatoes (whole roasted sweet potatoes whipped with coconut oil, almond milk and salt).
Trader Joe's brown rice penne mixed with store bought pesto, sautéed frozen peppers, spinach, and mushrooms, and a can of tuna.
Savory overnight steel cut oatmeal with fried egg, avocado, and sriracha.
Vegan lasagna with homemade garlic bread plus salad with the best balsamic dressing.
Homemade pumpkin English muffin (I did the oat version and added a teaspoon of sugar and some pumpkin pie spice) with butter and almond butter with scrambled eggs.
Have you made my apple crumb pie yet? It's a must for Thanksgiving!!
Chipotle with brown rice, black beans, fajita veggies, tomato salsa, corn salsa, guac, lettuce, and chips on the side.

Things I'm Loving Lately
I settled on this big cozy rocking chair for the nursery and I'm so excited about it. The light brown + ivory boucle was sold out for a while so I added my email to the waitlist and ordered it the following week when it came back in stock. I wanted a chair that could transition post baby to be a regular piece of furniture, and I think this will be perfect. Now I just need to find a side table!
Gap is having a big 40% off sale. Even leggings are uncomfortable for me right now, so I ordered some cozy pants that I can lounge and sleep in over the new few months. I got these joggers, sleep pants, and this open side nursing hoodie.
So excited about these olive joggers to stay cozy in the hospital. I got this soft tie dye shirt, too!
I also stocked up on these nursing tanks, which are super comfy.
