Lovely Meals and Snacks Lately
I’ve been making soup each weekend for easy lunches (which we usually pair with leftover Paulee Gee’s square Detroit-style pizza reheated in the oven…amazing). My cream of mushroom and wild rice soup may be my favorite soup on the blog! I didn’t have celery but I did have some extra shrooms to add from our CSA.
Can’t stop with the flourless pumpkin muffins!
Lately I have a muffin or something when I wake up and then another breakfast an hour or so later. This pumpkin pie smoothie (although swampy looking) was divine! I didn’t have frozen banana but I added frozen zucchini, ice, spinach, chocolate plant protein, and used coconut water. So yummy.
Chipotle bowl with brown rice, black beans, fajita veg, corn + tomato salsa, guac, lettuce and chips for an easy weekend lunch.
Veggie frittata! I scrambled zucchini, peppers, and tomatoes in olive oil with salt, pepper, oregano and basil until they were really browned and broken down. Then I added 6 whisked eggs and plenty of salt and pepper and cooked it until mostly set before finishing it under the broiler. Great with cheese, too! Served with lemony olive oil arugula and avocado toast.
Still obsessed with date hot chocolate made by blending non-dairy milk with dates, cacao and salt, warming it on the stove, then stirring in vanilla! I’ll post the recipe one of these days….
I got Rice Chex at the store with the plan of making puppy chow (thanks, Nicole!) but I’ve been loving it straight up with cold almond milk, sometimes mixed with Cheerios. This baby looooves his cereal!
Big bowls of cereal have been my jam for breakfast. This one had Cheerios, old-fashioned oats, walnuts, chia seeds, flax, fresh blueberries, banana, and cinnamon.

Things I’m Loving Lately
WEARING: I’ve been living in this cozy plaid flannel! This dress is super comfy and cute with booties (amazingly comfy and 60% off!) and a jean jacket. Those booties are super cute in cheetah print, too.
LOVING: This hand-dyed mask. Hayley, a fourth grade special ed teacher, started making masks when she wasn’t able to work her normal summer camp job this year. It’s super comfy and has great coverage.
