Howdy, pals! I’m 23 weeks pregnant this week and having all kinds of fun symptoms like shortness of breath, endless burping, and charlie horses at night. I will be writing a full second trimester recap, don’t you worry.
My current challenge is deciding what stroller to get, so if you have strong feelings about one, let me know! I’m leaning toward one that converts for two kids because we want to have our kids close together.
For now, let’s talk good eats!
Lovely Meals and Snacks Lately
Whole Foods brand blueberry waffles with fresh blueberries, peanut butter and maple syrup.
I made a sweet potato black bean version of my beloved pumpkin walnut burgers, which I’ll be sharing with you soon!
I was craving mint chocolate so I made an amazing smoothie with frozen banana, frozen zucchini, spinach, cashew butter, cacao, chocolate plant protein, peppermint extract, and coconut water + almond milk. I forgot to take a photo post blend!
Apple cinnamon swirl bread heated up from the freezer with coffee in the morning. It freezes super well.
Black bean and shiitake veggie burger at Alchemy with all the fixings.
Shrimp curry with green beans and peppers from our CSA served with brown rice. Delish!
Have you ever made a s’more with a dark chocolate peanut butter cup? Amazing!
Overnight steel cut oatmeal with Honeycrisp apples, peanut butter, maple syrup and salt. It tastes like a caramel apple!
Creamy butternut squash pasta with peas. This is a throwback recipe I love that comes together really quickly, especially if you use frozen pre-cut squash. Great with hot sauce.
Pumpkin muffins on repeat! I have a new super easy flourless version coming soon that you’re going to go bonkers for.
Paulie Gee’s Detroit-style square pizza (one cheese and one pep) for a Friday night treat. I always heat it up on the stovetop when we get home so it’s extra crispy. The honey takes it over the top…seriously the best ever!
Lentil soup (I subbed sweet potatoes since I had a bunch) and leftover pizza for a nice Sunday lunch.
Things I’m Loving Lately
WEARING: If you need new Ugg’s this winter, these are all 30% off. I got these slippers for Jeff. Loving this vintage crew neck that comes in so many cute patterns! This long leopard cardigan is so cozy.
READING: I’m excited to start There’s No Such Thing as Bad Weather, which came highly recommended for moms-to-be!
LISTENING: I’m loving Calm Guitar on Spotify while I work.
CRUSHING: These apple pie scones are gorgeous. I want to drink pumpkin cream cold brew for days! And these slow cooker apple chai spice steel cut oats.
Have an amazing week, pals!
So fun hearing that you guys are hoping to have two close together! 😊🎉 No stroller advice to share but just wanted to say your apple bread recipe is AMAZINGGG!!! We’ve been snacking on it all wk and not stopping anytime soon. ☺️ Can’t wait to see the sweet potato black bean burger and pumpkin muffin recipes!! 🤗
Hahah thank you sooo much!! I just had a slice this morning!! Hope Denver was fab 🙂 XOXO
The city jogger double lux is awesome. It can convert to two (even three) and can have a bassinet or car seat attachment as well. There is also a huge basket underneath that can fit a large grocery trips worth of stuff 🙂 best of luck!
PS…mom brain! I forgot to say that then you’ll have a single stroller for when the older kid decides they’re too big for a stoller/want to ride a bike, etc but #2 isn’t quite ready for that yet. I recommend having both a single and a double.
I have the Baby Jogger City Select Lux and love it! I have a 3 year old and a 1 year old and we use it every single day for walks around our neighborhood.
I have two kids with one on the way. My first two are 2.5 years apart and we really love the City Select Lux by baby jogger. It’s a tandem and it’s great for walks with just one or both kids.
Great to know, thanks Megan!
ok adding a peanut butter cup to a s’more is the exact kind of think you’d expect a pregnant woman to come up with – and it sounds AMAZING! definitely trying it when we finally crank up the fireplace or firepit this season (once it’s cool enough in the south).

Hahah do it!!
My girls are 13 months apart. I debated strollers for SO incredibly long it was ridiculous. We ended up getting a Britax set (came with car seat) so we had the single for baby #1. When baby #2 came I thought I was going to get one of the $1200 front-back strollers with all the fun conversations. But when I went to the store and tried them out, I found out what a PITA they are to get in your car/travel with because you have to partially disassemble. Not happening. I ended up getting a Valco Baby side by side and LOVE it. And it was half the price of what I was originally going to get! It glides and turns well and you can fold it up with one hand. It fits in my car easily and traveling on a plane is easy too. Highly, highly recommend! Especially if you’re having babies close together.
