We’re back with another round of good eats! My appetite is most definitely increasing with every passing week. I feel like I’m eating pretty much all the time. This little guy is growing fast!
Onto the foooood.
Lovely Meals and Snacks Lately
Avocado toast and fried eggs for breakfast.
Corn quinoa chowder for lunches with all the local corn we got in our CSA box.
I made stuffed peppers for dinner using this recipe as a guide. I bulked everything up to fill 6 peppers so it would last us two nights, including upping the rice and spices and adding a diced zucchini to the mixture. I served them over Rao’s sauce with some parm on top and we both loved them. They’re super filling. Salad with the best balsamic dressing on the side!
We have some super fun new seasonal meals coming to Alchemy Meal Prep, like these sweet potato dumplings with apple cabbage slaw and walnuts plus an amazing kale salad with beets, squash, lentils, Brussels, and tahini dressing.
A divine leftover chocolate croissant from Pistacia that I warmed in the oven to have with our coffee in the morning.
We went to La Tavola for dinner on Saturday night and I had a delish ricotta gnocchi dish with butternut squash and sage. Unpictured was a salad to start with oranges, beets, pistachios, fennel, and goat cheese plus some bread with olive oil. Yum!
Our favorite apple pancakes topped with peanut butter, maple syrup, and more Honeycrisp apples. Is anyone else eating apple everything right now?! Served with scrambled eggs for some savory. I ended up having a third pancake.
Something I ate a ton in the first trimester and just started having a hankering for again is cottage cheese. I snagged this brand at Target and I really love it! It’s a nice savory snack when I’m sick of hummus (if you can believe that happens).
An Amy’s bean burrito with salsa and leftover guac plus plenty of blue corn tortilla chips for an easy lunch.
Pumpkin bread on repeat. It freezes well, too!
We have a new butternut squash toast with herbed goat cheese coming to Alchemy this Thursday and I got to go to town on it yesterday morning during our photoshoot.
Overnight steel cut oatmeal with lots of cinnamon, almond butter, and fresh blueberries.
Things I’m Loving Lately
CRUSHING: We just got a couple of these seat cushions because I’ve had crazy lower back pain lately and Jeff and I sit on uncomfy chairs all day. What a game changer! Also this pregnancy pillow is my favorite thing ever. It’s SO wonderful. I think I’ll still use it even when I’m not pregnant!
WEARING: I got this adorable cheetah cardigan sweater (30% off!) and it’s SO soft and comfortable. Great to throw on with the leggings I currently live in! I sized up for pregnancy and I’ve already worn it multiple times.
READING: I’m almost done with American Dirt and I’ve absolutely loved reading it. I just ordered The Girl From Widow Hills, so I’m excited for another thriller!
WATCHING: We’re on the last season of Yellowstone and sad it’s almost over! I’m already looking for our next show…

I’m pregnant with my third, and I cannot stop eating cottage cheese 😂. I literally dip everything in it. Crackers? Duh. Veggie chips? Sign me up. Honey mustard pretzels? Surprisingly delicious. Graham crackers? 100%.
