How’s it hangin’, pals?
Thank you tons for your sweet messages on our baby announcement post. I’m just so grateful to be feeling more like myself in the second trimester. I’m 17 weeks now and our little baby is the size of a pomegranate!
I wanted nothing to do with cooking or recipe testing for most of the first trimester, so I can’t tell you how encouraging it is to actually feel motivated again. Onto the good eats!
Lovely Meals and Snacks Lately
I switched it up for breakfast and tried overnight oatmeal (the kind with rolled oats that you don’t cook). At night, I mixed together a heaping half cup of oats, a tablespoon of chia seeds, and a pinch of salt. Then I stirred in about 3/4 cup almond milk, a splash of vanilla, a spoonful of peanut butter, and a splash of maple syrup.
I ate it in the morning with sliced banana and cacao nibs for crunch. It was quite nice having breakfast ready to go, I must say!
I defrosted wild salmon we had in the freezer and baked it with pesto for an easy dinner. I was majorly craving baked potatoes and MAN, did they hit the spot.
For the potatoes, pierce them a bunch of times with a fork, rub with olive oil and kosher salt, and bake on a lined baking sheet at 450F for about 45-55 minutes, or until the skin is crispy and the inside is fork-tender. We ate them with butter and salt….simple and amazing. Sautéed broccoli with red pepper flakes on the side for veg!
Corn chowder with quinoa! So nice having this on hand for lunches.
Blueberry Cacao afternoon snack from Alchemy with frozen blueberries, avocado, cacao, hemp seeds, and vanilla extract plus chocolate plant protein. Tastes like a chocolate blueberry milkshake!
My mom got me a pack of dark chocolate covered graham crackers from Heinen’s when I was home in Cleveland. I ate them slathered in peanut butter and it was fantastic.
We got amazing produce in our CSA box and had everything we needed for this summer vegetable skillet lasagna recipe we love. Just make sure to add salt to taste since it doesn’t mention it in the recipe.
To make garlic bread, spread bread with butter and top with lots of garlic powder, nutritional yeast and salt. Broil until browned on both sides. I have the most amazing Italian dressing recipe coming your way soon!
Savory overnight steel cut oats topped with salt, a fried egg, avocado, and sriracha. If you haven’t tried savory oats yet, you must!
Simi brought us corned beef sandwiches on rye (hello, pregnancy craving) from Katzinger’s which we devoured with pickles, potato salad, and salt and vinegar chips for crunch. Yum!
We went to our friend’s house for Mediterranean night which was super fun. I brought baba ganoush and grape leaves from Aladdin’s. Delish!
The next morning for breakfast I made scrambled eggs and devoured them with a bunch of toasted pita and leftover baba. So divine. The next day I added a sliced tomato with salt and pepper to the mix.
I just picked up this cereal at Whole Foods and I can’t wait to enjoy it for an evening snack when I’m craving sweet and crunchy. Reminds me of Reese’s Puffs cereal!
Snack plate with blackened tofu with mustard from Alchemy Meal Prep, wax beans from our CSA that I steamed in the Instant Pot, plus leftover potato salad.
Jet’s pizza…our weekend staple.
5 Things I’m Loving Lately
WEARING: Still living in these insanely comfy bras. Since none of my pants fit and it’s too hot for maternity pants, I ordered some flowy dresses that I hope fit including this floral baby doll dress and this tunic dress.
EATING: Small batch almond chocolate chip cookies…YUM. Chocolate olive oil muffins with chocolate streusel sound like the perfect answer to my constant chocolate cravings. And because we need vegetables, too…this roasted carrot tart looks sublime.
READING: I couldn’t say this for so long BUT I finished Bringing Up Bebe a few weeks ago and loved it. Highly recommend to any mamas to be on there! The Last Flight is next on my list. I finally finished Beach Read on Audible…but I honestly couldn’t get into it!
LISTENING: Young and Beautiful by Lana Del Ray.
CRUSHING: I haven’t gotten my nails done since before quarantine and it took months for them to recover from the gel. I got a cuticle clipper and started clipping my cuticles, which is actually very relaxing. Pair that will clipping my nails and filing them regularly and now they’re looking super healthy!
If I feel like some color, I’ll use Essie gel couture nail polish and top coat that my best friend who’s AMAZING at nails recommended.
