We went to Cleveland this past weekend and it was so wonderful to finally hang with family and friends we hadn’t seen in ages. Of course we had some delish eats, too!
Lovely Meals and Snacks
Snagged an everything bagel croissant (it had cream cheese baked in!) and coffee from On The Rise Artisan Breads for a quick breakfast on the go. The new Van Aken area is so cool!
Have you tried my chocolate peanut butter bars yet? I’m obsessed.
I made mac and cheese for my friend’s birthday and it was to die for. My friend Dylan shared his Grandma’s recipe with me, which I used as a guide except I made more sauce since I knew it would be sitting for a bit.
It’s a classic recipe involving melting butter and whisking in flour to create a roux, adding several cups of 2% milk, a whole lotta freshly grated sharp cheddar cheese, some garlic and onion powder, and tossing with cooked elbow noodles. I love breadcrumbs on top for crunch plus some extra cheddar all baked and crispy!
I made this lentil chili and it was delish. I added a good squeeze of lime juice at the end and served it with a half batch of my favorite cornbread (sans jalapeño) that I cooked in a rectangular Pyrex instead of a cast iron skillet. Works amazing plus you can put leftovers directly in the fridge! Chili with cheddar, cornbread, hot sauce, and green onions is my jam.
Over easy eggs with a whole wheat English muffin! Love me some avocado with red pepper flakes and a squeeze of lemon juice.
Overnight steel cut oatmeal with blackberries and almond butter. Mmmmm.
Fajita night once again! We’re hooked on this weeknight meal, plus it makes a ton. I’ll share my recipe for portobello fajitas and guac soon.
I made this pecan apple chickpea salad to have on hand for easy lunches and it’s great! Very yummy with crackers or on toast.
I made these chewy chocolate chip cookie bars again for my friend’s birthday and they were a big hit!
Soul bowl with tofu and chipotle sweet potato hummus from Alchemy Meal Prep! One of my favorites.
Delish but unfortunate looking smoothie with frozen banana, frozen spinach, cacao, peanut butter, half a scoop of chocolate plant protein, a few ice cubes, and almond milk.
I was really craving chocolate cookies, so I whipped up this recipe. I used all purpose flour and cane sugar and added more chocolate chips. They were delish but kind of crumbly. Next time I’d add an egg, and perhaps try using a stick of butter instead of the 6 tbsp oil + 2 tbsp milk combo so they’re extra moist.
Smoothies (mine had banana, pineapple, mango, peanut butter, spinach, kale, almond milk) plus yummy avocado toast from Restore in Cleveland before we headed back to Columbus.
Things I’m Loving Lately
WEARING: I fixed the links to the dresses in last week’s post if anyone was wondering about those. I just ordered this maxi dress in “b-green.” The tie-dye blue is really cute, too! It’s the Nordstrom anniversary preview sale, so here’s what I snagged: these cat-eye sunglasses, this Moto jacket, furry fleece in beige, this white blouse, and these booties in tortilla suede.
WATCHING: Catching up on old This Is Us episodes.
CRUSHING: This is so random but we’ve been ordering Cocofloss for a year now and it really helps us floss. The flavors are so fun and once you see all the stuff it gets out of your teeth, I swear you’ll never go back!
