Happy middle of the week, pals of mine!
When I was in the throes of disordered eating and obsessed with health to an unhealthy extreme, food was everything to me. It was always a perfectly put together moment. It was always controlled. Because diet, my friends, is a very easy thing to control and manipulate and distract oneself with.
So now, years later as a self-proclaimed “normal eater,” not feeling the need to constantly document what I eat is a form of freedom. Going out to eat and ordering gnocchi with marinara and not Instagramming it is freedom.
Food being fun and delish and lighthearted and celebratory, but not in a way that it’s the center of your universe and ridden with anxiety and fear, is freedom. I no longer have anything to prove.
In a world of overstimulation and oversharing, there’s something extra special about holding a moment close and knowing it’s for your eyes only. Nothing sucks the joy and presence out of an experience like whipping out a phone.
For those reasons, I probably take photos of about a third of the food I eat. What you see below is more of a snapshot, and is definitely not comprehensive.
Non-photographed yummies this week include Harvest pizza night, my friend’s daughter’s insane chocolate birthday cake with homemade buttercream, the juiciest cantaloupe, and a corned beef sandwich with sauerkraut and tons of mustard and a pickle. Yep…that happened. Cravings, I tell ya!
Lovely Meals and Snacks Lately
Have you made my blueberry pie bars yet? They’re the bomb!
Open face tuna salad sammie with tortilla chips on the side for crunch. Such an easy lunch to pull out of the fridge.
We made these waffles for the second time and they were a hit. The yogurt adds such a nice tang. I love them with almond butter, fresh blueberries, and maple syrup. Went back for seconds!
So many of you have been making and loving these chickpea broccoli buddha bowls so I decided it was time for me to make them again. I cooked a bunch of brown rice in the Instant Pot and roasted an extra large sheet pan of broccoli, carrot, and cabbage. Jeff had his with chicken and I did frozen edamame. I forgot how amazing that peanut sauce is!
Breakfast toasties (this is TJ’s sprouted multigrain bread), one with sunflower seed butter, raspberries from our CSA, cinnamon and honey and the other with avocado, fresh lemon juice, red pepper flakes and salt. Been digging the sweet and savory! Sometimes I add eggs.

Peanut butter banana smoothie! I blended up frozen banana, peanut butter, a bit of avocado, cacao, two dates, ice, vanilla extract, and almond milk.
I made this mac and cheese but added sautéed mushrooms, peas, and two cans of tuna. Since there was more stuff, I used closer to 2 cups of cashew milk. I also added panko and parm on top and broiled it at the end. Yum!
S’mores! We “roasted” the marshmallows over the stove and used Hershey’s special dark chocolate. Too good.
I was craving comfort food so I made chicken and dumplings but did more carrot and celery and kept the chicken separate for Jeff (I actually love the flavor but didn’t want the chicken itself). It would be good with chickpeas!
I made the homemade dumplings listed in her post using whole wheat flour. When it was done, I stirred in a bit of fresh parsley and dill. It was delish!
I had the soup with this spinach feta pie (plus Frank’s hot sauce) and it was fab. I used full fat feta and next time I’d up the veggies and add lemon juice.
Easy pasta night with broccoli, chard, goat cheese, and olive oil plus salad on the side.
Can’t stop with the crackers + hummus + hot sauce combo. Whole Foods’ lemon hummus is my jam lately, so creamy.
5 Things I’m Loving Lately
WEARING: I’m in desperate need of easy summer dresses to throw on. I ordered this breezy lavender dress (size down), camo dress and this great brown tank dress. Also, I have these pajama shorts in three colors and they’re the best everrrr.
EATING: Risotto stuffed peppers…AKA the most epic summer dinner. These blueberry cardamom honey muffins are all I want on a slow Sunday morning. This southwestern corn and zucchini chowder looks just luscious.
WATCHING: I need a new show. Tell me what you’re watching!

CRUSHING: We could all use more positive news nowadays, right? How about free drive in movies! These beluga whales got to swim in the ocean for the first time in 11 years. And how about this lady making history? What a time to be alive.
