Lovely Meals and Snacks
I’ve been super into lemony grape leaves dipped in hummus with hot sauce for a snack or lunch addition.
Have you tried my new cherry crisp recipe yet? It’s so amazing with ice cream on top!
This sheet pan shrimp boil was such a nice change of pace for dinner and it’s pretty easy to make! I recommend sprinkling plenty of fresh lemon over everything right before serving. We both loved this one!
Dried apricots with sunflower seed butter (I like the unsweetened one)…I can’t get enough.
Steel cut oatmeal with chia seeds stirred in plus amazingly juicy local blackberries. I’ve been adding a pretty big pinch of salt while it cooks and I think it’s key for amazing oatmeal!
Still not over egg sandwiches. I get at least one a week, either from Alchemy or Fox in the Snow.
This instant pot thai cauliflower curry is Jeff’s go-to dinner when I don’t feel like cooking because it’s so dang easy. We use frozen cauliflower and pre-chopped butternut squash so we don’t even have to cut anything. Pair it with instant pot brown rice and dinner is served!
These chocolate chip cooke bars were AMAZING! Just look at that height. I highly recommend.
Siggi’s black cherry yogurt with buckwheat crunchies and sunflower seed butter…YUM.
I whipped up a pretty little tomato salad using juicy tomatoes from our CSA box, arugula, mozzarella, balsamic, olive oil, salt and pepper. It was a nice little veggie app!
I’ve been serving fruit and veggies before breakfast and dinner respectively and it’s been really nice. I keep it simple, like chopped cantaloupe in the morning and sliced cucumbers in apple cider vinegar, olive oil, salt and pepper before dinner.
I made spinach and artichoke dip with crostini based on this recipe but with changes. I used all sour cream (no mayo), used more artichokes (brined) and more spinach, and added the juice of a lemon (key for flavor), salt, and red pepper flakes. It was delish!
The vegan manicotti with kale and spinach cashew cream sauce from Meal Prep is easily one of my favorite meals. So flavorful! Also the jammies I’m rocking in the below pic may be the most comfy ever. I just got them and I love them!
5 Things I’m Loving Lately
WEARING: I mentioned these above, but I can’t say enough about this insanely comfy PJ set. I want to wear them every night. You can’t do much better for $22!
EATING: Summer peach galette, anyone? No-churn key lime pie ice cream…I can’t even. I am here for these vegan potato skins!
WATCHING: Anyone else watching Peaky Blinders? We’re only a few episodes in but we’re digging it so far. It’s definitely different than our usual shows but I’m ok with that!
LISTENING: Expectations by Katie Pruitt. The Last Great American Dynasty by Taylor Swift. I love most of her new album!
CRUSHING: I got one of these sea salt caramel and dark chocolate Sweeter Cards in the mail and I was in love! The concept of a chocolate bar and a card all in one is amazing, but the best part was the chocolate itself. Quite literally one of the most wonderful chocolate bars I’ve ever laid mouth on.

So much great meal inspo!! Wish we lived in the area bc the Vegan manicotti from Meal Prep looks AMAZINGGGG!! Guess I’ll settle for making the Instant Pot cauli myself instead lol. I’m in need of some super easy meals, this one looks like a winner! 🙂

So many yummy foods! I was wondering if you have ever made buckwheat hot cereal instead of oats? I was looking to switch it up and wanted to know if you recommend any brands you prefer for buckwheat? Thanks!
Did you make the cookie bars as is? I don’t generally keep all purpose flour, brown sugar and white sugar on hand since my favorite recipes don’t call for them.
