How’s it hangin’, internet pals?
We’ve got a major heat wave going on and all I want to do is submerge myself in a pool. Sigh!
The good news is that we’re heading down to our friends’ lake house this weekend and I can’t wait to relax, disconnect, and ultimately lounge in the cooooold water.
I’m bringing this strata for breakfast Saturday morning (it was a hit last year and I can make it the night before) and thinking of this lovely raspberry ricotta cake for dessert. If anyone has a favorite festive treat, let me know in the comments!
Lovely meals and snacks lately
Van’s blueberry waffle with more blueberries and salted peanut butter plus my favorite summer twist on avocado toast (nectarine or mango, tahini, and a good pinch of salt). I’ve been loving this sprouted bread.
Mango blondies! Everyone that’s made them says they taste like cookies. Mission accomplished.
I made hard boiled eggs in the oven for quick snacks and I don’t think I’ll ever go back. Simply bake them in a muffin tin at 325F for 30 minutes (I did 29) and then place them in an ice bath for 10 minutes. So easy.
Iced coffee season! I’ve been using the below combo and it’s been my jam to sip in the morning while I read outside.
We made enchiladas again with colby jack on top. Lately I’ve been baking them at 375F for 20 minutes. Love these with chips and salsa. Jeff said this batch was restaurant quality!
I saw red, white and blue peanut M&M’s while we were checking out at the grocery store and grabbed them immediately. It had been way too long and I’m obsessed with them frozen!
Overnight steel cut oatmeal with sliced bananas, walnuts, and cinnamon. I’ve been rotating between oatmeal, toast, and cereal depending on what I’m feeling in the morning.
Chocolate blueberry smoothie with peanut butter and buckwheat crunchies on top.
Avocado egg salad (hard boiled eggs mashed with avocado, onion, red wine vinegar, salt and pepper) with puffs plus strawberries on the side for a yummy lunch!
Chipotle veggie burrito bowl with all the fixings. I got a tortilla on the bottom instead of chips this time and it was awesome.
Lasagna with garlic bread and salad. Never gets old!
