    Lovely Meals Lately

    G'day, mates! We're doing Lovely Meals Lately on a Thursday this week because my brain is all jumbled and this is how the cookie crumbled.

    How are your weeks going? What are you cooking? What are you reading? Tell me all the things!

    These posts are meant to provide practical inspiration to eat satisfying foods that nourish both the body and soul. They are not meant to be used as a comparison. We all have unique budgets, energy needs, levels of food security, and dietary preferences. I do not take photos of everything I eat, so consider this weekly roundup a snapshot. Eating intuitively looks different for everyone, so let's honor those differences!

    Lovely Meals and Snacks Lately

    The best whole grain pancakes (but I used half spelt flour) with eggs cooked with veggies for a satisfying brunch.

    Chickpea pasta (love that I don't have to add a protein!) with sautéed broccoli, chard from our CSA box dressed with plenty of olive oil, nutritional yeast, and salt. Goat cheese for tang and creaminess!

    My beloved Chocolate Almond Flour Banana Bread made with flax instead of eggs. So divine with a cup of peppermint tea.

    Waffles! I hadn't made waffles in forever so this recipe was a fun change of pace. I used full fat yogurt and topped them with berries, peanut butter and maple syrup.

    My favorite Healthy Tuna Salad on toast with tortilla chips on the side.

    Chipotle for a quick weekend lunch. I got shredded lettuce, brown rice, fajita veggies, black beans, tomato salsa, corn salsa, guac, and cheese.

    Taco night! I used my Chickpea Walnut Tacos recipe. This is one of my favorite dinners! In case you missed it, don't forget to check out my round-up of the top 10 dinner recipes we make most.

    Avocado mash from Costco plus Mary's Gone Crackers.

    Vermont Bakery English muffin (one side pb and one side avocado) plus eggs. Do you seem a theme here?!

    A delish chocolate chip tahini cookie from Brassica.

    My favorite smoothie combo lately is frozen mango, strawberry, and banana, avocado, flax, collagen, and coconut water (a must for enough sweetness!) plus matcha buckwheat cereal and full fat Greek yogurt on time. Totally having a moment with yogurt right now.

    Five things I’m loving right now:

    1. Favorite product: Still these wireless earbuds. They're life-changing for working out because they stay in your ears and are under $30!

    2. Favorite quote: “There came a time when the risk to remain tight in the bud was more painful than the risk it took to blossom.”

    3. On my wish list: Utter Nonsense Naught Edition. I got this game for one of my friend's birthdays and it sounds hilariuous. She's loving it!

    4. Favorite book: I just finished One True Loves by Taylor Jenkins Reid and adored it, like I do everything she writes. Next on my list is American Dirt.

    5. Favorite article of clothing: I just got these Athlete camo shorts because all I want to wear right now is comfy long wear and it's too hot for leggings. They're SO comfortable and don't squeeze at the waist or ride up. I wear them for just hanging out but also running! I'd say they run a bit large. I also have these black shorts and I adore them.
