    Vegan/Gluten-free Substitutions: Omit the egg to make this vegan. Swap out the parmesan cheese for a vegan version or nutritional yeast. Use gluten free pasta and bread crumbs to make it gluten free.

      I agree that the One Pot Tikki Masala sounds really delicious! I have recently discovered nutritional yeast, but have not used it with noodles yet. I'm definitely up for trying that. The Roasted Root Vegetable Buddha Bowls sound awesome too.
