Awesome meal plan! My wife and I have a vegetarian week every month and it’s my turn to plan this month’s week. 🙂
Alexis, these meals are so beautiful and healthy. I am most excited about the Spinach Enchiladas. I hope your second round of antibiotics is working for you so you can enjoy tasting these wonderful meals you are creating.
Loving all the vibrant colors this week! And I keep hearing about Miyoko’s Kitchen cheese–how does it compare Daiya? Daiya’s game isn’t bad but I could see room for improvement.
This is awesome Alexis. Meal plan really look healthy. The images just made me WOW.

Another delicious week, Alexis! I really want to try spag squash- still haven’t!
