    Spaghetti Squash with Mushrooms, Kale and Cashew Alfredo from Making Thyme for Health

    Prep Ahead Tip: Cashew alfredo can be made up to 3 days in advance.

    Vegan/Gluten-free Substitutions: Recipe is vegan and gluten-free.

    Sheet Pan Roasted Vegetable Fajita Lettuce Wraps from Eats Well With Others

    Prep Ahead Tip: Remember to marinade your veggies from the night before! The vegetables can also be roasted ahead of time.

    Vegan/Gluten-free Substitutions: To make these vegan, omit the queso or replace it with your favorite vegan cheddar cheese. The chipotle crema can be made with silken tofu in place of the sour cream and full fat coconut milk in place of the half and half. This recipe is already gluten free.

      Can I just say how much I appreciate that there is a shopping list at the end of each post? I think for me, the barrier to mixing up my weekly meals is the time it takes to look through recipes, write down everything we don't have, and plan which day I'll make what. You take all of that out of the equation and it is so appreciated!

      Can I just say how much I appreciate that there is a shopping list at the end of each post?       Wowza, all this looks SO good! The spaghetti squash dish feels like a tease - just yesterday my friend and I were complaining about how there haven't been any at our local supermarket lately because they're out of season!

      Delicious! I can't believe I've actually never tried making spaghetti squash before as a pasta replacement - been solely on the zucchini noodle train. I think I'm going to change that this week! πŸ™‚
