    One Pot Baked Paneer and Chickpeas with Spinach from Eats Well With Others

    Prep Ahead Tip: No need to prepare ahead of time, this recipe comes together pretty quickly and is very hands off!

    Vegan/Gluten-free Substitutions: Recipe is already gluten free. Substitute tofu for the paneer and use dairy-free milk in place of the heavy cream to make it vegan.

      Love this recipe Alexis! I like to make fresh red paprika filled with cottage cheese. I cut the paprika in half and fill each half with cottage cheese + cheese + egg and a little bit of salt. I bake that in the oven for about 10-15 min. It's so light and delicious :)

      Another week of meals that look nothing like what I'd normally eat, but they all look delicious! I love these weekly posts and using them for meal inspo.
      Also I wish "last few days of winter" were accurate! Haha I'm not getting my hopes up for spring weather anytime soon
