Top 10 Hummusapien Dinner Recipes We Make Most

    Published May 14, 2020 · Modified Feb 15, 2022 · by Alexis Joseph · 2 Comments

The top 10 Hummusapien dinner recipes we make most! From tacos to curry, these are our favorite easy and healthy meals that make great leftovers.

We all got 'em---those dependable meals that we can go back to again and again, knowing they'll never fail us when dinnertime rolls around. Now that we're all cooking more at home, I hope this go-to list is more helpful than ever.

Convenience and taste are two of the biggest factors when I'm deciding what to cook. No need to choose between one or the other, ya dig? I also like to make enough food to feed us for two nights so I'm not cooking every evening.

Even Jeff even knows how to make 95% of the meals on this list. I'm convinced he makes better lasagna now than I do!

I'm delighted to report that every recipe in this round up fits the bill for both function and flavor. Many of these meals work in a variety of seasons and can be customized with ingredients I happen to have in the pantry or fridge.

As a bonus, these recipes are all easily frozen so they're perfect for prepping ahead. Hop to it, you expert cooks, you!

    Chickpea Walnut Tacos

Dylan said: "These tacos are one of our weekly meal-staples too! It all comes together so quickly!"

The best healthy Vegan Chickpea Walnut Tacos with a super "meaty" filling made with mushrooms, chickpeas, walnuts, and homemade taco seasoning. This recipe makes a lot of "meat," so it's great for a crowd!

    Easy Vegan Lasagna

Nessa said: "This is my first time leaving a comment for any online recipe. This lasagna was easily one of, if not the BEST vegan savory dish I’ve ever made (I’ve been cooking homemade vegan recipes for 2 years now). Congrats on making a meal that’s easy to cook and assemble and delicious! My husband is a picky eater and he’s convinced that all vegan cheeses are gross – he’s tried store-bought ones and many nut cheeses. He finished his dinner and asked for seconds and said this is the only vegan cheese that he likes! Thanks again."

    Healthy Tuna Noodle Casserole

Kalan said: "I was craving some good comfort food that wasn’t full of cream, butter, and cheese. After searching through a lot of different recipes, I found this one. Made it for my hubby and he didn’t even comment on the whole wheat noodles, kale, or the fact that it didn’t have the amount of cheese he was accustomed to. We both loved it and he asked for the leftovers for lunch the next day. I think next time I’ll sneak in even more green stuff! Thank you for the wonderful recipe…it’s definitely a keeper."

This comforting dairy-free Healthy Tuna Noodle Casserole is made decadently creamy with cashews! Just as satisfying as the original, it's the ultimate weeknight dinner!

    Chili Cornbread Casserole

Nathan said: "Amazing recipe thank you sooo much. I substituted the butter with greek honey yogurt and it worked amazing for the corn bread topper. I just didn’t have butter. Thanks it was a big hit!"

Hearty vegetarian chili topped with cornbread, this cozy Vegan Chili Cornbread Casserole is the perfect meal to feed a crowd! Comfort food at it's finest. Vegan and gluten-free option.

    Vegan Enchiladas

Amy said: "OMG these were AH-MAZE-ING! I used the homemade enchilada sauce you recommended, which was fabulous! I also subbed some corn for the bell pepper cause it’s what I had. I made my meat and potatoes lovin' husband try it and he said it was delicious! This recipe is going to be on repeat for the next several months!"

    Salmon Burgers

Kylie commented: "Just made these burgers and they are DELICIOUS!! I popped them in the freezer and I am so excited to have them on hand for future dinners. Thank you for sharing!"

Pasta or Spaghetti Squash with Bean Balls

Heidi said: "These are GREAT! 4/4 people with different pickiness meters all loved them. I plunged in and made a double batch and froze half for a quick spaghetti and meatballs dinner some night–really glad I did. The first batch thawed and then cooked great tonight. Thank you for sharing!"

    Easy Vegetable Teriyaki Stir Fry

Kelsy said: "Made this for dinner last night and am currently sitting at my desk eating leftovers for lunch… I think it might actually get even better the next day! So, so good! And to make it even quicker, I used a frozen bag of mixed stir fry veggies. This will definitely become a regular in my rotation!!"

    Creamy Veggie Chickpea Curry

Andrea said: "I made this dish last night and it was so yummy. I didn’t have asparagus on hand but made it anyway. A hearty, flavourful meal. Thank you Alexis!'

    Pumpkin Walnut Veggie Burgers

Lindsay commented: "These SO tasty! What a great texture. My husband is allergic to tree nuts, so I subbed pepitas for walnuts."

Hearty plant-powered Pumpkin Walnut Veggie Burgers with Chipotle Yogurt Sauce. Bursting with flavor and ready in under 30 minutes!
