Mediterranean Salad in a Jar

This refreshing, nutritious Mediterranean Salad in a Jar is the perfect protein-packed EASY lunch on the go!
  • 1 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • Big pinch of salt, pepper, and oregano
  • ½ an avocado
  • ¼ cup chopped shallot
  • 1 cup canned chickpeas, drained and rinsed
  • 4 cups arugula
  • 2 large hard-boiled eggs
  1. Mix together olive oil, vinegar, and seasoning in a small bowl. Distribute evenly into two quart-sized mason jars.
  2. Layer the avocado, shallot, chickpeas, arugula, and egg in the order listed dividing evenly between both jars.
  3. Tightly close jars and refrigerate for up to 2 days. When you're ready to eat, shake jar well and pour into a big bowl.
