'Twas the week of waffles and quiche and cardigans.
And coffee shop muffins that I inhaled pre-picture.
Nothing new to see here, folks
Calling all RDs going to FNCE in Chicago this weekend! Join me and Simple Mills on Sunday, October 22nd from 11am-1pm at the Hyatt for pumpkin donuts with salted chocolate glaze, lunch, and fab conversation with yours truly and Simple Mills' CEO, Kaitlin Smith. Click here to register. I can't wait to meet you!
How could you say no to this dream donut?!
Breakfast
I've seriously been eating the pumpkin waffles with Earth Balance, almond butter, and ample syrup that I posted about last week from Vegan With a Vengeance like every day. It makes a HUGE batch. This is the waffle maker I use, which I think is older than I am.
Fried eggs and avocado toast also made an appearance.
Overnight pumpkin pie oatmeal with rolled oats, pumpkin, chia seeds, maple syrup, pumpkin pie spice, cinnamon, and almond milk with almond butter on top.
Lunch
The quiche recipes is coming TOMORROW so stay tuned! It's a keeper. I can't wait for lunch everyday because it's so damn delish.
Leftover smoked salmon + rye croissant from Pistacia Vera with Glowing Orange Carrot Ginger Soup on the side.
Cream of Broccoli Soup with a bunch of chard cooked in from our CSA + Simple Mills sea salt crackers for dipping.
Dinner
Deconstructed tacos with avocado. This is the brass and gold centerpiece pictured below!
Buddha bowl from Northstar.
Vegan zucchini meatballs over whole wheat spaghetti with Costco's organic marinara, basil, and salad.
P.S. the table runner I have from West Elm is half off right now. Get it while it's not! These are my place mats from Target.
Saturday night frozen Kashi margarita pizza. Started with two slices then went ham on a third!
Our favorite chili with leftover brown butter cornbread from the freezer.
Dessert/Snacks
Un-pictured honey crisp apple with nut butter.
Greek yogurt bowl with walnuts, strawberries, and cacao.
Giant salted dark chocolate chip cookie from Northstar.
Cookie Dough Protein Bars on repeat.
Fluffy Pumpkin Oatmeal Cookies drizzled with chocolate---recipe coming soon!
Blueberry Banana Nut Baked Oatmeal with Breyer's vanilla ice cream on top.
Style Inspiration
I did a poll on Instagram asking who wants to see more style tid bits, and 82% of you said yes. I've always loved fashion, so I've decided to put more intention into sharing that part of me! If you have any strong opinions one way or another, feel free to leave a comment.
I bought a few chunky cardigans from Forever online and every single one fit! That never happens. This and this are my absolute favorite. Shown here is the blue cardigan, my go-to Zella black leggings, Stan Evans sneakers, gold initial necklace, and purse. The tank is older but this and this are similar.
The red plaid shirt I'm wearing in a couple photos above is legit the comfiest shirt I own and it's on sale for $20! It runs a little big so I would size down. Going to buy the other color ASAP!
This waffle knit cardigan has been my obsession this season. I love throwing it over a tank with black ripped skinny jeans (on sale for $35!) or leggings. I got these super comfy Lucky booties last year at Nordstrom, but this and this bootie are really similar. If you're looking for one with a heel, these black bootie heels in gray are my obsession.
I met a friend for drinks Saturday night and it was the perfect opportunity to wear my other favorite new sweater! These comfy Hudson distressed skinny jeans are the bomb because they don't get stretched out. I think I've worn them like ten times and haven't washed them once. Guys. This geo pattern poncho is literally $12. Like what?! I paired it with a tucked in black tank, peep toe booties, and my favorite little black bag.
Other goodies I found from Forever for super cheap include this poncho inspired knit top, this amazing geo printed hoodie poncho, and this black faux suede overall dress for less than $23.

Love the fashion tidbits! That cookie looks marvelous; can't wait for the recipe. Also, I'd love to see a recipe for those overnight oats! And honey crisp apples are the BEST with almond butter! I just had one right now 🙂
