    What I Ate Wednesday

    Today is my last day of nutrition coaching at Ohio State's Student Wellness Center. Eeeeeek! One step closer to graduation. So bittersweet!

    Onto the eats!

    Breakfast

    I've been obsessed with huge smoothies made of frozen blueberries, a little frozen banana, a date, zucchini, chard, spinach, chia seeds, cacao, almond milk, stevia, and topped with lots of Enjoy Life's flax cereal crunchies. The only reason this picture looks so pretty is because it's for a future recipe post and giveaway. Muhaha! Stay tuned.

    Snack

    Tomato basil mozzarella quinoa muffins

    I knew I was having a late lunch, so I snacked on two of these tomato, basil and mozzarella quinoa bites. Again, a pretty picture because I'm posting the recipe on The Lean Green Bean tomorrow!

    I also had a couple handfuls of homemade popcorn with truffle oil that my roomie made. Heaven. Aaaaaaaand iced coffee with soymilk.

    Lunch

    Earth Day wouldn't be complete without FREE Northstar veggie burgers! Complete with a hugh jass oatmeal raisin cookie that tasted like the best thing I've ever eaten.

    Dinner

    Dinner was my leftover coronado white bean and spinach salad with wild salmon from The Crest with some other random add-ins thrown in.

    I also snacked on like half a bag of Beanitos.

    lilly's

    One of the girls I babysit got this Lilly's dark chocolate in her Easter basket, so obviously I had to try a piece. Make that two. It's sweetened with stevia and erythritol instead of sugar and actually tastes amazing! I'm definitely gonna be on the prowl for it next time I'm at Whole Foods.

    P.S. I got this chap stick at the dentist today and had to post a pic of the ingredient list for you guys. How ironic is that after yesterday's post? Ick!!
