You’ll notice that today’s eats are very veggified.
Lately I’ve been dealing with some stiffness and discomfort in my fingers along with a few other odd symptoms. I’m not sure what’s going on with my body, but I do know that loading up on anti-inflammatory plant foods never fails. Chia seeds, hemp seeds, walnuts, flax are all packed with omega-3 fatty acids (not to mention fiber and plant-powered protein) to fight all if this unwanted inflammation. Plants it is!
Breakfast was my go-to green smoothie with frozen blueberries, chia seeds, hemp seeds, cacao, spinach, dates, Skoop protein, and almond milk. Skoop is one of my favorite plant-based protein powders because not only is it a whole-foods formula created by a doctor, but it’s also one of the only brown rice protein powders that actually tastes good.
One of the best parts about Skoop is that it doesn’t have that overly gritty texture that many plant-based proteins on the market have. Skoop is made primarily with brown rice and pea protein and sweetened with organic stevia and honey. It also contains branched chain amino acids to aide in muscle recovery after a workout. I don’t use protein powder often, but when I need a boost, Skoop is one my go-to products!
I snacked on a few apple pie oatmeal cookies on my way to work. These cookies are quickly becoming a new favorite. They have no added sugar and they taste like a cross between a healthy cookie and a granola bar. They’re perfect for guilt-free snacking!
Lunch was the most delicious creamy curried kale and chickpeas. This was the best dish I’ve made in a long time. It’s totally vegan, too! I think the cumin seeds and garam masala are what gave it that truly authentic taste. I got them both in the bulk bins at Whole Foods for less than twenty cents a piece. So dreamy. I also had some big juicy grapes on the side.
Work flew by and I didn’t have time to snack. For dinner, I noshed on a salad with balsamic that I made earlier in the day. I’ve been trying to eat more raw veggies and this big salad with carrots, tomatoes, peppers, red onion, and walnuts did the trick! I also had an Engine 2 brown rice tortilla with hummus, a little lentil soup, and some roasted veggies.

My favorite smoothie is a modification of your Peanut Butter & Jelly Protein Smoothie. Instead of frozen red grapes I use frozen strawberries and almond milk instead of water. I currently use Plant Fusion as a protein but I would LOVE to try Skoop!

Also, I am totally with you on the random pains/inflammation thing. I have been experiencing lots of pain in my joints/bones/muscles lately and no doctors seem to be able to give me an answer or help me. I have been trying to eat more Omega 3s, but I don’t really love walnuts and I don’t like adding chia/flax to my smoothies because it thickens them too much by the time I get to work. Any other thoughts for getting in more anti-inflammatory foods?
I love that raw veggie salad that you’ve had! Sounds very good. I hope your weird symptoms ate getting better. Not being able to use /move your hands or fingers properly must be very uncomfortable…

Gah! It would be so clutch to win this. I’ve been wanting to try skoop for a long time but it’s just not in my budget right this minute. My fave smoothie I’ve ever made was peanut butter chocolate pumpkin. Out of this world good. PS I’m glad to see someone else uses the Kirkland cinnamon. It’s such a good deal for the amount you get!!

I can’t believe I haven’t heard of this protein, it looks amazing and you totally sold me on the statement that it doesn’t have a gritty texture. That is one of my pet peeves! My favorite smoothie has AVOCADO! For real it makes the most creamiest addition and is my go to whenever I make a smoothie… Here is what a typical smoothie I make in the AM has: Spinach & Kale, frozen Pineapple, frozen mango, frozen banana, avocado, and chia seeds. The bananas are bough fresh and then personally frozen by me, the pineapple and mango are purchased frozen and organic. It is seriously one of my favorites evahhhhh!!!
This may sound gross, but I like to throw in frozen peas! They blend in really nice and they’re a great way to add protein without using a protein powder. Sometimes I only want natural flavoring in my smoothie. And since I read your 5 veg smoothie recipe, I put zucchini in every smoothie. It adds yum vitamins and no flavor. Perfect!

I know this is weird considering I”m a health food nut usually, but I just don’t make smoothies! I like to chew my food, so if there is smoothie it’s as a base for granola and tons of nut butter like an acai bowl. I imagine a banana pb combo would be awesome since I make banana ice cream that way.
ps. your food always makes me jealous, wish I worked at a heatlhy restaurant and got to try all that stuff!
