    What I Ate Wednesday

    Hi hi hi hi hi.

    I don't know if it's Body Pump or Barre or WHAT, but I have been extremely hungry lately. Like let's have three substantial snacks in a row and then eat dinner an hour later. I blame it on my ever-growing muscles.

    Breakfast

    Banana Cranberry Quinoa Mini Muffins ST

    I went to bed super late last night and woke up at 9:30am--fifteen minutes before I was supposed to leave for a Barre class. I grabbed a few banana cranberry quinoa mini muffins on my way out the door. The recipe will be up on Simple Truth any day now!

    Lunch

    I was STARVING when I got home from Barre and was craving a smoothie like crazy even though it was below zero outside. I blended up some frozen berries, banana, flaxseed, power greens and almond milk and topped it with my fave Enjoy Life cereal. Those crunchies kill me. I also had a bowl of lentil, quinoa and kale stew from my new Isa Does It cookbook. Deeeeeee-lish.

    Snacks

    Major snacking happened today. An hour or so after lunch I made a batch of raw chocolate truffles from the Oh She Glow's cookbook bonus recipe bundle. Then I had a peanut butter banana white bean breakfast cookie. Mmmm.

    Aaaaaand I had a little bowl of Mediterannean cauliflower cous cous salad. That recipe should be up on Simple Truth soon as well!

    beanitos

    Then I met my girlfriends from class at Starbucks to work on class stuff. Before I ran out the door I snacked on my fave Beanitos chips. If you haven't tried them, you MUST. They're made with beans AKA they have fiber out the wahzoo.

    I got a decaf coffee with soy on top, obvi.

    Dinner

    It had been waaaaay too long since I'd made a baked sweet potato with salsa, avocado and fried egg. I baked two sweet taters before I left for Starbucks so all I'd have to do was fry up an egg when I got home. Peas on the side, derrrr.

    I munched on a bowl of cranberry quinoa granola with almond milk before bed plus a cup of tea. No pic, sorry!

    Hope your eats today were nothing short of fabulous!

      My appetite has also been insane lately. I don't know what it is... it was almost nonexistent for two weeks, which is great because usually I'm ravenous... ugh gotta figure out what it was. Your day of eats is amazing. Especially those white bean cookies. I have to try them out after my 21DSD haha.

      So bizarre. I've been scary hungry lately too! I'm not a breakfast person AT ALL, except if we're talking brunch with mimosas, but lately I've been ready to gnaw my arm off the moment I wake up. That baked sweet potato + egg looks amazing BTW. I'll have to try that combo!

        Brunch with mimosas sounds SO good right now. You must try the sweet tater combo, it's my obsession! So easy and delish.

      We must be hunger twins.....Since moving to Sydney my hunger has been OFF THE CHARTS...but I have no workouts to blame. πŸ˜‰

      All these simple truth recipes....so not SIMPLE in acquiring them.
