It’s been a hawt minute since I posted a full day of eats. Let’s change that!
I was staaaaaarving in class and all I had was this cup of fruit. It was leftover from working at The Crest, so it tasted delicious nonetheless.
Lunch was leftover roasted brussels sprouts and leftover creamy dijon tempeh spinach casserole. I just use a block of tempeh, a small carton of Greek yogurt, 2 tbsp of dijon mustard, a huge handful of spinach, salt, garlic powder and pepper. So freaking easy.
I also had a smoothie with frozen mango, banana, a splash of orange juice, almond milk and a power greens blend. FAB.
Class snackage included peppers with an adorable little guac and half of an oatmeal cinnamon raisin protein bar.
I got home from body pump starving my tush off and all I wanted was eggs, like always. I cooked 1/4 cup of quinoa in 1/2 cup of vegetable broth and added a bunch of frozen broccoli near the end. Then I scrambled up some eggs and mixed it all together. Adding salsa and hot sauce was a great decision.
This chocolate peanut butter dessert hummus is my OBSESSION. It has the absolute best texture. Like addicting is an understatement. It’s another ST recipe that I suggested be paired with sliced apples or crackers, but I downed half of that bad boy with a spoon, as should you.
