    What I Ate Wednesday

    Man oh MAN, today was a hungry day. Maybe it's because it's that time of the month or maybe I just need to face the fact that I'm a ravenous beast 99.97% of the time.

    It was one of those days where I wanted to take a bite of everything in the fridge but couldn't since I had to snap a darn pic of everything. But I kind of did anyway. Duty calls. #whatiatewednesdayprobs

    Breakfast

    Mango-Oatmeal-ST

    Another yummy Simple Truth breakfast recipe! This tropical concoction had steel cut oats, quinoa and a bit of chia cooked in water and coconut milk with frozen mango, coconut, vanilla and honey added at the end. Mmmm.

    Snack

    mini muffins

    I noshed on two mini banana pumpkin muffins while watching baby Elle stuff her face with peanut butter. Adorbs.

    I devoured a homemade black bean burger with tomatoes, avocado and spinach all drizzled with TJ's Β balsamic glaze.

    Then I devoured some mini pineapple coconut banana bread made with almond flour. Holy yum. Isn't it cute??

    Snack

    While transcribing the focus group sessions for my thesis, I noshed on a big honeycrisp apple and some winter dream tea. The apple tasted like onions and I was VERY sad about it. Note to self: never put a bag of chopped onions near the apples in your fridge. Wise words.

    Dinner

    Dinner was my new favorite crockpot concoction, featuring broccoli, brown rice, chickpeas and some other goodies! Keep your eyes peeled for the recipe TOMORROW! Eeeeeeek! I also had a baked sweet potato on the side.

    PicMonkey Collage snack

    Tonight was one of those nights where I could have snacked for hours on end. I had the last flourless cranberry chocolate chip cookie, followed by a couple dark chocolate covered almonds, a piece of challah raisin toast with a smear of buttah and some more winter dream tea. Mmmmmmm.

      LOL at the apple tasting like onions. One time my baby carrots tasted like ham... it was disgusting haha.

      Sounds like yummy eats! I had these really tasty mango chipotle chicken with avocado salsa for lunch. I am just about to start transcribing for my thesis! Yikes!
