Today’s eats were SERIOUS. Like on another level of yum. Probably because I’m going ham on developing the Simple Truth recipes and frantically trying to eat everything I make at rapid speeds before my fridge explodes. It was all so good, in fact, that I’m writing about it in fragments. My kitchen is a constant mess and my brain is a constant frenzy of chocolate, chickpeas and quinoa.
I freaking LOVE it.
I made a big batch of blueberry pie steel-cut oats to have for breakfast for the week. I simply boiled 1 cup of vanilla soy milk and 3 cups of water, then added 1 cup of steel-cut oats, 2 tbsp ground flax and a pinch of salt. I reduced the heat to medium-low and simmered it (uncovered) for about 35 minutes, stirring often. In the last ten minutes, I added 1 cup of frozen blueberries, 1/2 tsp of vanilla and a bit more milk to think it out in the end. Voila!
I also had a mug of gingerbread coffee with a splash of soy. I can’t get enough gingerbread lately, man.
Then I went to Cheryl’s cookies with the adorable baby I babysit and chowed down on a gingerbread cookie cutout. HEAVEN. Mind blown.
I noshed on one of my fave Simple Truth recipes yet–herbed chickpea burgers with lemony dill cucumber yogurt sauce on top of mixed greens with avocado and leftover lemon olive oil dressing. That’s a mouthful, huh? I added lots of fresh parsley and dill which made it super fresh and fabulous. I learned that the key to making the burgers firm and avoiding the whole crumbly dilemma is adding an egg. I’ve tried flax eggs in the past, but these stuck together SO well with a good old chicken egg. Lesson learned.
I also had some leftover veggie stew.
I snacked on an egg and a dreamy peppermint hot chocolate bite. (Weird combo, I know). I’m crying that there’s only one left.
Sorry to tease you, but this is another ST recipe…crockpot red lentil, quinoa and cauliflower curry stew. I have a thing for long names, clearly. OMG. So delish.
During the Victoria’s Secret Fashion Show, I snacked on some dark chocolate covered almonds and a cup of sleepy-time tea. Oh and the rest of my Mexican hot chocolate Greek yogurt dip.
