Why hellooooo honeydews! I ate WELL this week. Like, I somehow picked really, really yummy recipes to make and I had a really, really happy belly.
First off, let’s chat about a couple new products I grabbed at Trader Joe’s the other day. I totally forgot to photograph them, but I’m gonna tell you about them anyway because I’m obsessed. Let’s start with TJ’s organic brown rice and quinoa fusilli pasta. It has a fab texture, only costs $2.99, and is made simply from quinoa and brown rice. You’d never know the difference!
I’m also loving white miso, which I had literally never bought before until last week. Because it’s made with fermented soybeans, it has those beneficial probiotics that help balance out stomach acid and ease digestive discomfort. Miso has this incredible yeasty taste that I just adore!
Lastly, I’m really into frozen cherries. Usually I’m all about the frozen blueb smoothies, but cherries have been my jam! I don’t love the price tag, but I’m kind of addicted.
Now onto the eats! Breakfast was the usual make-ahead steel cut oatmeal with blackberries and almond butter. Are you sick of this yet? Rinse and repeat. I also had a cup of coffee with a splash of soymilk and a couple obligatory smoothie samples while at Alchemy, duh.
Lunch was this delish raw kale salad with creamy tahini dressing to which I added some gorgeous roasted beets and broccoli sprouts. The rainbow carrots (a la Green Bean Delivery) made this salad quite the stunner. I also added some falafel for protein. Side dishes included an Asian pear and the rest of the roasted sweet potatoes I had in the fridge (can you tell I had lots of produce to use up?).
And I couldn’t say no to a cup of our soup of the day…tomato, chickpea, and coconut!
Before Body Pump, I had a random snack of roasted beets with leftover tahini dressing which was actually an amazing combo.
I made a batch of these beyond fab banana muffins the night before so one of those made its way into my facetrap as well. We all know I’m the farthest person from paleo, but I love experimenting with nut flours and these did not disappoint! I made muffins instead of a loaf (just bake them for 28-30 minutes) and used coconut oil instead of butter and cashew butter instead of almond butter. Flawless!
I was ready to eat someone after working out, so dinner began with a smoothie (3/4 cup frozen cherries, 3/4 cup almond milk, huge handful spinach, 1 tbsp cacao, 1 scoop Skoop protein powder).
Then I had two bowls of this vegetable pasta with miso tahini sauce which you all should make because it’s the bomb. Seriously.
And thennnn I had some dark chocolate. Obviously.
And thennnnn I finished off a bag of popcorn.
I don’t know if it’s because I stand all day at work or what, but I’m pretty much always ready to eat. And then eat more. Can’t say I really mind. Good thing I love food and food loves me!
