Hellooooo, my long lost legumes!
I’ve been crazy busy with my friends’ wedding festivities in Chicago, Alchemy hoopla, finding a new apartment, and other life thangs, so my apologies for being a tad absent. I hope you all had a glories long weekend. Let’s get down to it and dig in to the eats!
I had no food in the fridge when I got back from Chicago so freezer stash to the rescue. Luckily I had a freezer smoothie pack filled with Blueberry Cacao goodies to power me through the morning! The usual coffee with cinnamon and soy milk also made an appearance.
I ate Alchemy for lunch thanks to my bare fridge. Our soup of the day was an incredible creamy curried vegetable (vegan of course) which I paired with Quinoa Kale Salad.
Snacks included a couple Raw Mexican Hot Chocolate Truffles from my freezer stash and a big apple.
Dinner was plenty of loaded veggie pizza from our beloved neighbor, Harvest Pizzeria. We also had an unpictured arugula salad with lemon and olive oil.
Before bed, I snagged a Flourless Peanut Butter Zucchini Bar from the freezer.
The freezer seriously kept me alive today, in case you didn’t notice.

i NEED to start making food for the freezer. it’s such a help when you come back from a trip and just have nooo desire to make anything. love the look of that pizza, it’s making me so hungry!
