    What I Ate Wednesday

    Hi hummus lovers! Lettuce dig right in to another round of tasty eats on this fine Wednesday morning.

    Recently I've really been digging toasted sesame Ezekiel bread with NuttZo, sliced berries and cinnamon, scrambled eggs with Fix hot sauce (my obsession), and coffee with almond milk. Sweet and savory! But yesterday I went back to basics with a smoothie bowl. This one had frozen wild blueberries, frozen spinach, flax, and vanilla Vega Sport topped with Power O's and drippy peanut butter.

    If you follow me on Instagram or Snapchat (username: Hummusapien), you know that around 11am we did a massive photo shoot of all our smoothie bowls and toasts at Alchemy. Needless to say, I did some major post-shoot grazing. How could I not have a bite of everything?! We're coming upon two years and I'm still not sick of anything on the menu yet. Hallelujah!

    We're catering a friend's wedding this weekend so we sampled some red and green veggie curry with basmati rice plus sweet potato turmeric hummus for lunch. It was DIVINE. I could eat curry every day of my life. Easily!

    Snack time involved a couple Morning Glory Breakfast Cookies. I love having snacks like this in the freezer for easy lunch box packing!

    Before dinner, I noshed out leftover roasted broccoli and radishes dipped in edamame hummus and some random but totally amazing caraway sauerkraut on the side. Don't deny the cravings!

    My gal pal Lauren and I sipped on vodka sodas with lime at Short North Tavern before digging in to veggie salads with greens, hummus, baba ganoush, lentils and rice, pickled veggies, roasted cauliflower, eggplant, and carrots at Brassica.

    You really can't go wrong with a bowl that has that much color!

      I am not really sure why to be honest, but I just love the WIAW posts. I can read them for hours! And they always give me great food ideas. I used to be a vegetarian (card carrying for about 7 years). Hardcore veganism wasn't for me, but I eat a very plant-based diet anyways. And who needs labels!? lol Well, I married a Marine, who is quite carnivorous. I am pregnant with our first baby and I am trying to up my veg intake and reduce my intake of meat. It is easy for me, but not so easy for the hubs. Any recommendations? I have been sort of doing vegetarian dinners here and there and not even mentioning it. He pretty much eats anything so it hasn't been hard, but I'm hoping to do even more! Thanks Alexis 🙂

        People LOVEEEEE these posts 🙂 It can be super inspiring to see what other people enjoy throughout their day. My boyfriend is pretty tall and muscular and eats a TON, so I feel you. His favorites are the tacos: https://www.hummusapien.com/vegan-taco-stuffed-sweet-potatoes/ (we eat them in blue corn taco shells) and lasgna (https://www.hummusapien.com/easy-vegan-lasagna/) since it makes enough to feed us for a couple nights. He also loves bean balls with a mix of whole wheat pasta and spaghetti squash. Hope that helps!
