    What I Ate Wednesday

    Another round of fantastically delish eats is in order!

    Breakfast has been the same exact thing everyday (except a smoothie or two thrown in the mix): make-ahead steel cut oatmeal with chia seeds, fresh berries, and lotsa drippy almond butter. If it ain't broke...

    I also had some coffee with unsweetened vanilla soy milk. I've somehow hopped back on the coffee train. Perhaps it's the 5am wake up calls?

    Lunch was my vegan enchiladas made with spinach and great northern beans this time. They never cease to amaze me! I always top them with my fave Frog Ranch Salsa.

    Snackage has been pretty much the same thang every day, including a big organic gala apple with almond butter and some kind of homemade muffin or no-bake bite. Notice that I eat all my food at Alchemy?!

    This week it was a version of my vegan chocolate banana muffins (which I've literally been making every week) with raspberries and chocolate chips. Hellooooo V-Day! I'll be posting the recipe soon, don't you worry.

    I made black bean soup for our soup of the day so I had a bit of that before I left Alchemy and The Fitness Loft for the day.

    I sipped on some decaf candy cane lane tea on the way to the grocery store after work and then chowed down on a banana before Body Pump because I thought I may eat my arm off.

    My grocery haul included steel-cut oats, two half-gallons of unsweetened vanilla almond milk, organic gala apples, organic celery, red garnet sweet potatoes, cauliflower, blackberries, asparagus, avocados, and wild-caught tuna.

    Dinner was the usual roasted sweet potatoes with hummus, roasted broccoli, and a big mound of this new veggie-packed tuna that I've been loving. I basically mashed up wild-caught tuna with avocado, salt, and pepper and then add chopped apples, red onion, celery, cucumber, spinach, and spicy brown mustard. Amazing!

    After dinner I obviously went back for second on sweet potatoes (I think I ate 1 ½ whole sweet potatoes). No shame.

    No night is complete without fair-trade salted almond dark chocolate....the BEST.

    I'm off to listen to "Love Me Like You Do" by Ellie Goulding on repeat. Be still my heart.
