Howdy there hummus lovers! Welcome to another edition of waking-up-at-5am-makes-me-a-ravenous-beast.
Breakfast was my usual steel cut oatmeal with chia seeds topped with sliced strawbs and almond butter. I prefer blackberries on top but hey, gotta get what’s on sale! I sipped on some coffee with a splash of vanilla soy milk as well.
Lunch was leftover crockpot Mexican casserole minus the cheese plus two extra cups of veg broth plus tons of spinach.
On the side I had a sliced organic gala apple with peanut buttah.
I had to sample a bunch of potential breads and baked goods for Alchemy, so the rest of the day was full of carby goondess. There are some tasty homemade bran bars and whole grain breads to come!
Before Body Pump, I threw in a pan of sweet potatoes and munched on a bunch before I ran out the door.
Dinner was a Hilary’s hemp and greens veggie burger with a fried egg over spinach with roasted sweet taters, these incredible rosemary roasted chickpeas from Whole Foods (new salad topper obsession and they’re on sale right now!), mustard, and hot sauce. It sounds crazy but it tasted like a dream.
Dark chocolate was my bedtime snack, per usual. Stay tuned for a fantastical recipe tomorrow!
