I snacked on some roasted sweet potato slices with hummus and hot sauce before lunch. This is hands down my favorite snack. I’m addicted!
There was a photographer from Columbus Alive taking pictures of a few items, so I ate the leftover hummus toast with micro kale. How could I say no?!
Lunch was later than I had hoped but still delish. Last time I was home, my mom made me vegetarian matzo ball soup with parsnips, carrots, and celery—just what this girl needed!
Terrible picture alert! Dinner was scrambled eggs, roasted broccoli, and more sweet potatoes. I’m all about the quick dinners lately.
