I was starving around 10am so I had some cucumbers with hummus and hot sauce...duh.
I realized when I got to work that I left my perfectly packed lunchbox at home....SUCH a bummer. I literally made a circle around the parking lot and was so close to going back to get it before I decided it wasn't worth it.
Luckily I made a chickpea, coconut, and sweet potato soup for Alchemy's soup of the day so I had a bowl of that for lunch plus some tuna kraut (albacore tuna, local Krazy Kraut saurkraut, apple, red wine vinegar, dijon, olive oil).
After a nutrition counseling appointment I snacked on a chocolate chip gingerbread chickpea blondie. Oh yes. Get excited. Get very excited. I also had two cups of organic mint green tea.

While I prepped sweet potatoes for dinner, I whipped up some hummus and ate a bunch with Trader Joe's woven wheats crackers.
For dinner, I noshed on baked sweet potato slices (I went back for more), roasted broccoli, a ginger peanut lentil burger (recipe coming soon!), and a spinach salad with pomegranate seeds and TJ's balsamic glaze.
I couldn't say no to the last "healthiest cookie ever," which is not only the healthiest cookie ever, but also the most delish cook ever. Make these immediately!!
I also couldn't say no to finishing this bag of popcorn while watching an incredibly suspenseful episode of Scandal.
