Yesterday’s eats were a bit off because I was feeling under the weather, but they were delish nonetheless!
I had to stand on a chair to get my juicer back down from on top of the cabinets where we put it for storage (that’s how much we weren’t using it). I wanted to get as many vitamins in as possible to stop my cold in its tracks, so juicing seemed like the most logical option. Man, I forgot what a pain that thing is to clean up! SO many parts. I juiced two big oranges, an apple, carrots, half a lemon, a couple big leaves of kale and a couple big handfuls of spinach. It was super sweet and tasted AMAZING.
I also sipped on like three cups of Gypsy’s Cold Care tea.
When I was ready for real food, I had one of my fave Vermont Bread whole wheat english muffins from Whole Foods topped with avocado and pomegranate seeds plus two eggs.
I snacked on leftover roasted acorn squash seeds, an apple and a homemade banana prune muffin in class (minus the cappuccino–recycled picture). When I had time to seriously eat, I scarfed down a spinach salmon burger. I hasn’t made these in a while and I totally forgot how amazing and easy they are!
I had the last of my pomegranate, quinoa and goat cheese stuffed acorn squash topped with more maple syrup and TJ’s balsamic glaze. Divine. Nikki was making some kind of coconut curry with veggies, tofu and quinoa, so I also had a couple little bowlfuls of that.
For dessert, I noshed on two gingerbread molasses cookies. Mine turned out way flatter than the picture, but tasty nonetheless!
