    What I Ate Wednesday

    Published Oct 15, 2014 Β· Modified Nov 8, 2021 Β· by Alexis Joseph Β· 36 Comments

Ever since I've been opening Alchemy at 5am, breakfast has becomeΒ a smoothie on the go in this convenient little Healthy Skoop shaker bottle. This mix was a frozen acai packet, half a banana, a tablespoon of cacao, some frozen berries, a tablespoon of hemp seeds, a date, spinach, some stevia, and almond milk. I would have LOVEDΒ some cacao nibs on top for crunch! latte I also had an almond milk latte while we experimented with the espresso machine. lunch Lunch was a Luna burger (my all time favorite veggie burger) topped with hummus, onion sprouts, and hot sauce. On the side, I had some of my beloved curried brussels sprouts salad. I created the recipe for Alchemy, but it's SO good that I may just have to share it on the blog. snack We just started selling some fabulous Good Bean products, so I snacked on some chocolate roasted chickpeas. The thai lemongrass ones are the best! enchiladas Dinner was a big helping of my Lentil, Kale and Salsa Verde Enchiladas made with pinto beans instead. I topped them with extra avocado and salsa, obviously. They never get old! choocolate After dinner snackage included some kale popcorn and pieces on pieces of the best dark chocolate ever. popcorn Happy hump day!]]>

Please share your brussels salad recipe! I can't get enough brussels sprouts. And a bonus 3/4 of my family members like them too. Still working on Meghan but hearing Luke yell "Mooooore brussels sprouts Mommmmy!" is the cutest ever. πŸ™‚

I'm -crazy- about those roasted chickpeas! I've never tried the Thai ones, but I'm a sucker for cinnamon. And chocolate with mango and coconut?!?!? I've seen those in stores but I never checked to see if it was allergy friendly. Hopefully it is!
