Breakfast was a blueberry smoothie made with 1 cup blueberries, 1 cup Silk unsweetened vanilla almond milk, 1 tbsp chia seeds, a huge handful of spinach, a dash of vanilla extract, a date, half a scoop of B Strong Healthy Skoop protein powder, and a few drops of stevia. It felt SO good to drink some fruits and veggies after all that ice cream the night before! I also snacked on some cold roasted broccoli (out of the fridge) dipped in hummus and hot sauce, per usual. For lunch I noshed on a huge bowl of Hearty Lentil, Kale and Potato Soup sans the potato. I've been craving soup with all the crazy cool weather! I did a ton of recipe testing today, so I ended up eating a whole Roasted Broccoli Burger with Spicy Cashew Mayo mid-afternoon. You guys....MAJOR swoon. I can't wait to share this gem with you on Monday! Dinner was a bunch of roasted broccoli and cauliflower, cooked quinoa, scrambled eggs, hummus, and salsa all mixed together plus some sweet potato slices on the side. It was an amazing dinner combo to tame the hunger beast after Body Pump! I also had a million bites of Chia Spiced Pear Baked Oatmeal that I made for breakfasts this week. Dessert was a no-bake cinnamon raisin bite that legitimately tastes like a cookie! You guys are going to absolutely die for this one. I'll be posting the recipe on Thursday so don't miss it!]]>
