    What I Ate Wednesday

    Published May 28, 2014 · Modified Mar 13, 2022 · by Alexis Joseph · 32 Comments

Today was chock full of happy and healthy eats--AKA the best kind. I was extra hungry today, probably because I ate my face off this weekend so my stomach isn't satisfied with a normal amount of food. Story of mah life.

    Breakfast

    smoothie22

Sorry I'm not sorry that I eat this smoothie err' morning. I posted the recipe on Insta and Facebook. Check ittttt.

    Lunch

    lunch 4-28

I lunched on a big salad with field greens, a chopped roma tomato, some green onions, and this amazing ginger miso dressing. I plopped a Luna burger on top for some more fiber and protein, which turned out to be an excellent decision.

    Snack

    muffin

I snacked first on a beyond delicious banana cinnamon chocolate chip muffin.

Later I noshed on some unpictured raspberries plus some chips and salsa while I babysat. I also had some roasted sweet potato slices because let's be real...I make them for later but I eat half the pan straight out of the oven.

    Dinner

    noodles

I can't freaking wait to post this recipe! It's all kind of delish. Let's just say it involves this cray cray black bean spaghetti and lotsa peanut sauce.

    snack 2.jpg

I snacked on like half a bag of Mary's Gone Cracker's pretzels with TJ's hummus before bed plus some obligatory dark chocolate. Happy hump day y'all!

Yummm that ginger miso dressing on your salad sounds beyond delish. And you're not alone in eating half the sweet potato while "prepping" it for later. 😉 PS... that dark chocolate... gimme.!!

You would love it!! Good to know that I'm not the only one with a ridiculous sweet tater addiction.

Ain't nothing wrong with eating the same thing for breakfast everyday. I'm pretty sure I've rotated through the same 2 week day breakfasts for the past 3 months haha.

I was literally just thinking about chips and salsa... like how I always OD on them. I don't know when to stop.

Haha, OD is an appropriate description to what happens when I eat them!

The serving size of tortilla chips is a SERIOUS joke.

Um, why aren't I your roommate again? You healthy little hummusapien, you. I'm still really loving your blueberry cacao power smoothie, but should give this one a whirl. So I have these really ripe bananas (multiple) and was thinking about making your no-bake banana nut protein bars (because Davida's cinnamon roll ones are damn good and I have a food processor so why stop now?) BUT now I am ALSO going to make these muffins! Excited - it's a banana party at my place. They look incredible. But did you alter the recipe at all? Cuz yours look different a bit. And delicious. So I'm all ears on your version. Also, I heart you. <3

I need to start making dark chocolate obligatory. It sounds like a good philosophy to me 😉
