    What I Ate Wednesday

    Yo yo yoooooooooo. Time to talk about all the food we ate. Let's do this!

    Breakfast

    I noshed on a giant bowl o' smoothie made with frozen blueberries, frozen raspberries, frozen nanner, a tablespoon of chia seeds, two big handfuls of spinach, a dash of vanilla, stevia and almond milk. I topped it off with my newest obesssion....Enjoy Life crunch flax cereal. There's something beyond magical about eating a smoothie in a bowl and having lots and lots and lots of crunch in each and every bite. It also keeps me from getting bored with smoothies. A smoothie by itself doesn't keep me full for breakfast either, so dumping healthy crunchies on top is the perf solution.

    I also had some chai tea with almond milk aaaaaaand some leftover whole wheat pita and hummus from work last night at The Crest. Oh the randomness.

    Lunch

    Lunch (eaten in class per usual) was mushroom quinoa soup (recipe to come) plus more hummus and sliced peppers.

    Snack

    PicMonkey Collage coffee and muffin

    I've been trying not to drink coffee, but I was suuuuuuper tired so I grabbed a coffee with soymilk to drink with my last pumpkin quinoa muffin before class.

    Dinner

    Dinner was my fave Chipotle bowl: salad with brown rice, black and pinto beans, fajita veggies, tomato salsa, corn salsa, guac and smoky Chipotle tabasco.

    Snack

    krispies

    I loooooved Rice Krispies as a kid. Now that I've discovered Erewhon's crispy brown rice cereal, I'm totally addicted once again. I had a big bowl (plus a little refill or two) with ice cold almond milk.

      I need to get some of that cereal! I tried oats on top of a smoothie bowl once and it just did not work... I love a little crunch added to any meal 😉

        Agreed--oats tend to soak up the smoothie and get soggy. Such a shame! That's why I looooove that flax cereal!
