    What I Ate Wednesday

    Hi hi hiiiiiii. So today's WIAW is gonna look squeaky clean because for the next thirty days, we're doing the Barre3 Spring Challenge! What whaaaaaat!

    Barre3 besties photo shoot hayyyyy! You can follow along with all of our challenge eats and fitness on our new little Instagram account, @ourspringbarre3.  Weeee!

    With graduation and birthdays left and right, I've noshed on my fair share of ice cream, cake, late night pizza and vodka sodas. Not that that's a problem, but since I know I'll be eating everything in sight when I go to Europe in a couple months, I wanted to take May to reset. More on this biznass lata!

    Breakfast

    I totally forgot to take a picture, so excuse this old one. Before Barre I slurped down a delish smoothie made with one ripe banana, ½ cup of frozen blueberries, ½ cup of cold water, 1 tbsp chia seeds, 1 tbsp raw almond butter and a huge handful of spinach. I also had some dried mango after my Barre class.

    Lunch

    Lunch was AMAZING. Dieeeeeed. Northstar rocks my world every freaking time. I had the townsfair salad with tofu minus the goat cheese, croutons and bread (no gluten on the challenge). I also had a bunch of bites of Ally's square meal (beans, rice and avocado goodness).

    I also had a fabulous unsweetened tropical green iced tea from Nordstrom.

    Snack

    I made a batch of no-bake bars from the Barre3 recipe app, which were a mix of dates, raisins, almonds, flax, coconut, coconut oil, sunbutter and cinnamon. They're definitely a new fave around here!

    I also snacked on a bunch of strawberries.

    Dinner

    For din din we made super tasty baked wild salmon paired with steamed broccoli doused in this peanut sauce. I also made a little spicy quinoa pilaf, which was just quinoa, garlic, tomatoes, spinach, salt and red pepper flakes sautéed in olive oil. It was so good that I may have to post the actual recipe when I make it again.

    While watching House of Cards, we noshed on stove-top popcorn popped in coconut oil followed by a dark chocolate raspberry black bean brownie, obviously.

      Those bars look good Alexis, I took a look at the recipe here: https://blog.barre3.com/2013/02/13/try-the-barre3-barre-recipe/. Congrats on doing the Barre3 challenge! I have a Barre3 in my neighborhood and I'm on their mailing list, but I just can't-- I'm too deep into the figure skating. Maybe in the summer when ice time is hard to find. Looking forward to hearing more about that upcoming trip to Europe!
