Today I snacked my butt off, and I liked it. A lot.
I made coconut mango brown rice and quinoa porridge (topped with almond buttah) and I clearly still don’t have a good name for it. It’s kind of like oatmeal, except it’s made with brown rice and quinoa…obvi. Who wants to name this beauty?? I’ll post the recipe soon.
I also packed a nanner and two hard-boiled eggs to munch on after my Barre 3 class, taught by my fabulous roomie!
I was feeling like making a salad, which is weird because I pretty much never make salad at home. I love eating them out, but for some reason they’re a rare treat other than that. The huge handful of spinach in my smoothies is salad enough for me these days! But this one was so good that I may just have to post the recipe. It was a scrumptious mix of spinach, strawberries, blackberries, almonds, chickpeas and homemade balsamic dressing. YUMZA.
I couldn’t resist a couple of lemon poppy seed mini muffins on the side…
I snacked on a yummy chocolate chip cookie, peppers and hummus, and the best dried apricots ever from Trader Joe’s (double what’s shown!).
Dinner was leftover kale and tofu sesame noodles that my mom got me from Mustardseed Market over the weekend plus a baked sweet tater. Carbs on carbs.
And then some more carbs, because that’s how I roll. Post-dinner snackage was more carrots (only because I couldn’t find the crackers) and hummus.
