Yeww guyssss. I’m SO glad that you enjoyed yesterday’s post! Eating clean is quite the tricky business, huh? I’m definitely going to start doing more nutrition-related posts in the future. Now let’s dive right in to the good eats!
Breakfast was my usual overnight steel cut oats. Here’s the low down. First, I bring one cup of unsweetened almond milk and one cup of water to a boil. Then I add 1/2 cup of steel cut oats and let them boil on medium-high heat for two minutes. Then I remove the pot from the heat, cover it, and let it sit overnight. In the morning, I add two tablespoons of chia seeds (it makes two servings) and then it’s all ready to go! Topped with berries and almond butter, duh.

I lunched on some spicy red lentil, sweet potato and kale soup that my roomie made last night paired with Ezekiel toast and avocado. Major yum.
Plus some Beanitos with salsa because they’re so freaking addicting.
Snacks were all the usual suspects, including a sliced apple with cinnamon, cucumbers and Roots roasted red pepper hummus, a banana almond butter muffin and a cherry vanilla almond bite.
I was STARVING when I got home from Body Pump, so the first thing I did was slurp down a smoothie made with frozen blueberries, lots of spinach, MCT Lean vegan chocolate protein powder, cinnamon and almond milk. Then I devoured a Mediterranean salmon burger (recipe coming tomorrow!) and some peas.
That was about it, folks! Off to work on my thesis till I die.
