Spiced Apple and Carrot Muffins

  1. Preheat oven to 375°F. Spray a muffin tin with cooking spray.
  2. In a medium bowl, stir together the dry ingredients (oat flour through salt).
  3. In another bowl, beat together the egg, applesauce and vanilla. Stir in grated carrot and apple.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon batter into prepared muffin cups. You should have about 8 muffins.
  6. Bake for about 20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool for 10 minutes in pan on a cooling rack. Then carefully remove muffins from tin and allow them to cool completely on rack.
  8. Store muffins in a Tupperware in the refrigerator.
