Amazing healthy recipes to make for brunch for Christmas morning! Savory egg ideas, sweet quick breads, pancakes and more.
Why HELLO there!
It's me, your favorite Jewish blogger chatting your ear off about Christmas morning breakfast. Because in my years of celebrating Christmas with boyfriends, I've learned that that's TOTALLY a thing, right? It sounds so cozy eating breakfast and sipping coffee in plaid PJ's UGH. We gotta make this a Hanukkah tradition!
Whether you're craving sweet or savory, I've got some fabulous recipe ideas that double as delicious and perhaps a wee bit wholesome for your holiday spread. As an added bonus, some of these can me made ahead so you just have to wake up and bake. Weeee!
Because you deserve to wake up to the the smell of Apple Cinnamon French toast!!
Broccoli & Mushroom Breakfast Strata
Lindsay says: "I made this this weekend. Another amazing creation!!!! Thank you so much!"
Apple Cinnamon French Toast Casserole
Ilona says: "We made this for breakfast today and it was delicious!! It was nice to have French Toast without being bathed in syrup. My teens (15+13) enjoyed this and even ate the pomegranate too!"
Spinach & Mushroom Quiche with Spelt Crust
Jeff says: "I didn't know how much I liked quiche till I tried this one. So good!"
Fluffy Vegan Pancakes with Blueberry Topping
I say: "This is my go-to pancake recipe. So fluffy every time!"
Healthy Pumpkin Gingerbread with Maple Glaze
Angelina says: "This came out so good! I used regular eggs and butter instead of vegan, and used Bob’s Red Mill 1 to 1 Gluten Free flour instead, and it worked perfectly. The perfect holiday treat!"
Tip: You can totally double this and bake it in a 9x13in pan until eggs are set if you're feeding a crowd. Amanda says: "Made this last night for dinner and loved it! My husband, who vehemently is opposed to breakfast for dinner actually liked it! Win-win!"

It all looks so appetizing. But I rarely eat in the morning. I can drink coffee and I have enough (or green tea). And closer to dinner, my hunger wakes up.

I can vouch for the pumpkin gingerbread. Been thinking of making that in muffin form to supplement our tamales!
