For as long as I can remember the words “dinner time” get my heart jumping for joy. Delish dinners are by far the most creative and dynamic meals of the day!
This time of year, “quick,” “easy,” and especially “healthy” meals are not often four words that go together in the same sentence. Sad, right? The summer months are upon us, humbelievable trips are being planned, outdoor brunches are being scarfed down, the kiddos big and small are rushing to finish their finals, and sit down dinners are more often than not pushed to the way wayside. Dontchya know I always have a solutions?
Worry not my foodie frands for today I have compiled a long list of downright delicious, daring, drool-worthy, and decadent dinners. How’s that for your daily dose of all alliteration? Oh and they’re all vegan, duh.
I firmly believe that during these crazy times in our lives it’s important that we take a minute (or two, or two hundred) to pause and indulge in the self-care that is a wholesome dinner. Whether we are sitting down with our honeys, our families, friends, kids, or Downton Abbey and a glass of wine, any and all of these easy peasy dinners will delight and satisfy!
