May is FLYING by and I’m just sittin’ here flying by the seat of my pants.
Is it just me or is everything happening so fast? Sometimes I wish life would just sloooowwwww down a wee bit. I want to stop and smell the flowers!! No time for that.
Breakfast was a thick smoothie eaten with a spoon, which has been super satisfying these days. In the mix went a cup of frozen blueberries, a cup of frozen spinach, a tablespoon of cacao powder and hemp seeds, a few drops of liquid stevia, tons of almond milk, and my fave brown rice protein.
After a nutrition consultation with a client at Alchemy, I snacked on a piece of avocado toast with sea salt, red pepper flakes, and micro kale on local whole wheat bread. I’ve been working on expanding our menu this week and I’m so freaking excited for all the new bowls!!
Lunch was a rendition of this delish spring farro risotto with lemon and tahini. I use less oil and farro, double the mushrooms, and add broccoli.
Snack was a vegan chocolate banana muffin, per usual.
I had an extra special Korean Bibimbap Bowl for dinner with a fried egg on top. The bowl was a mix of quinoa, fava beans, bean sprouts, edamame, green onions, spinach, sesame seeds, carrots and a super tasty sauce from The Purple Carrot!
The Purple Carrot is a whole foods, plant-based meal kit delivery service that provides all the raw, pre-measured ingredients you need to cook nutritious meals and snacks at home. All of the meals are organic, vegan, non-GMO, and locally sourced when possible. In fact, they source from up to 50 different farms to provide that unique farm-to-table experience for customers.
Each box comes with two meal recipes and one snack recipe, which are created by top plant-based chefs, food bloggers, and cookbook authors from around the country featuring minimally refined whole foods. Since the meals are designed for busy families and professionals, they only take about 30–40 minutes to prepare. Each dinner serves up to four people, and the entire order costs $59 (about $7.38 per meal for 8 meals).
Every Sunday, The Purple Carrot features “This Week’s Menu,” which includes four new seasonal dinner recipes and one healthy snack. Then the customer chooses two meals (the snack comes automatically). Past meals and snack selections include spinach fritatta, taco salad with chipotle lime sauce and butternut squash stuffed with mushrooms, quinoa, spinach, and almonds; and snacks like blueberry chocolate trail mix bark, chocolate chip energy bites and no bake granola squares.
Last night I whipped up Sweet Potato Mushroom Tacos with Chili Mango Salsa and the Korean Bibimbap Bowl. Both were super tasty, easy to prepare (hello, pre-chopped sweet potatoes), and tastes like the meals I would prepare on my own at home! It was pretty incredible not having to search for a recipe, go to the store to buy the ingredients, and then prep everything. They really take out the guess-work for ya!

Unfortunately TPC currently only delivers to 25 states in the Northeast and Mid-Atlantic, from the tip of Maine, as far west as Chicago, and as far south as the Carolinas. The company is planning to expand its distribution in early 2016 with an additional west coast-based facility sourcing local ingredients to support customers in that part of the country.
Post-dinner snackage included some roasted white sweet potatoes with sunbutter and a no-bake cherry vanilla protein bar. Helloooo sweet cravings!!
