I had plans, people. I had big PLANS.
Hi all, it’s Kendall and okay okay so maybe my big plans were to make the Best Easy Vegan Lasagna for dinner tonight. As we all know, plans don’t always work out. I had also planned to be completely done with all of my finals study guides by last night, to stay in on Saturday night, to graduate early, and to be a Disney Channel child star by this point in my life. Plans go awry—’tis my life as a college student! To be honest though, I don’t regret any of it. Okay except maybe the whole study guide part and I still really want that lasagna. All of those changes brought me awesome experiences and a life I love!
Life happens. Shit happens. But amongst all of that there can also be magic! Plans change, but living life only according to plans can cause us to miss the good that can come from that unexpected change.
I may not have had time between textbooks to make a lasagna, but you better bet I worked well, or should I say ate well, with the time I had. Happy Wednesday, beautiful humans!
Breakfast was some quick n’ easy overnight oats pre-cycling. Post-cycling consisted of zooming as fast as my friends and I could over to Alchemy to get our hands on the New Orleans Iced Coffee with cashew milk and the Umami Kale Salad with a special order of tuna and beet kraut on top! Have you guys check out their apparel yet? I’m OBSESSED with my Avocaduh shirt.
Afternoon snacks consisted of the best ever GT’s gingerade kombucha (I will miss my house’s funny wallpaper next semester) and the best BEST ever Italian Espresso Coconut Chips from Made in Nature that Alexis brought me last week.
I went to find them at our local Whole Foods with no success, so if you see these coconut chips out in the wild anywhere please help a girl out!
Early dinner was an everything-but-the-kitchen-sink kinda omelette. It wasn’t lasagna, but it was delish.
During finals week, there are no caffeine rules! This latte from a local coffee shop was much needed.
