Yesterday morning I had to quite literally fly out the door, so I barely had time for breakfast. I had to be in a professional setting and wasn’t feeling post-smoothie blue teeth, so I opted for Ezekiel toast with crunchy almond butter, sliced strawberries, and cacao nibs (coffee with almond milk to wash it down, obvi). The strawbs were super sweet which the made the toast pretty dreamy.
I was in a similar rush for lunch, but luckily I had my Easy Vegetable Teriyaki Stir Fry with quinoa leftover in the fridge. It’s my obsession. Topped with lots sriracha….I can’t. The toasty cashews mixed with the sauce is truly the stuff of dreams!
Snacks involved two Carrot Cake Protein Bars from the freezer warmed up until they were nice and soft plus an organic Fuji apple, my fave.
Dinner was plates on plates of adorable and super delish veggified appetizers, salads, and treats while we celebrated the launch of Cara Mangini of The Little Eater’s new cookbook, The Vegetable Butcher! It’s a beauty and all the food was out of this world.
Dessert was a couple lemon coconut date rolls from my pals over at Natural Delights! It’s hard to believe that I was plucking dates of the tree at the Medjool Date Blogger Summit in Arizona nearly a year ago. I remember watching the date rolls being made like it was yesterday!
These babies are officially in stores for spring, so be sure to get your hands on a box! I’m more than obsessed.
