Yesterday ROCKED me. And my socks.
Which explains why I’m blogging at 7:30am when I have to be on the news making tuna salad in t minus two hours. OY VEY.
Yesterday I went to a rockin’ early morning Barre3 class and then spent the rest of the morning working on blog stuff. There are some seriously delish recipes coming your way, my friends! Then Alchemy was super duper busy and I didn’t get home until 10pm. Eating dinner at 10:30pm is no fun. No fun at all.
Before Barre, I snacked on a brown rice cake with smashed avocado, red pepper flakes, and salt. Dreamy much?
My post-Barre smoothie was my current favorite: 1 cup frozen blueberries, 1 cup frozen spinach (makes a huge difference in texture!), 1 3/4 cups unsweetened vanilla almond milk, 1 tbsp cacao powder, 1 pitted date, 1 scoop Skoop brown rice protein, 1/2 tsp vanilla extract.
Then I went on a popcorn rampage, as any normal person would when developing a recipe with Bob’s Red Mill popcorn. I snacked on a million and a half handfuls while I made these beauties. Then I ate some of the beauties, duh.
Notice the popcorn all over the floor. And my clothes.
I’m not telling you what they are yet but you’re welcome to guess!
Lunch is kind of a joke when I’m at Alchemy. I’m basically just shoving food in my face whenever I have time. It’s always a length process. Today was a quinoa and kale salad with tempeh a la Veestro! Veestro is an organic vegan food delivery service that I’m currently crushing on. More on that later!
I snacked on a couple vegan chocolate banana muffins in between making quinoa fried rice salad for Alchemy…
…plus some of Alchemy’s soup of the day, which was vegan tomato, chickpea, and coconut. Someday I shall share the recipe!
When I finally got home, I scarfed down the baked spaghetti with tofu ricotta that was smushed in a Tupperwarre plus an apple that I had packed in my lunchbox for earlier times.

Homemade popcorn is the best!! SO much better than store bought. We like to pop ours in coconut oil and the toppings vary with whatever we are feeling that night. Can’t wait to stop by tomorrow and see those delicious treats!
Rushed meal-times are so fun, right? Oh the joy! I recall my days as a personal trainer with back-to-backs, trying to go to the bathroom and eat something in under five minutes. Glad you got a workout and plenty of veggies in! Good stuff! 🙂

You made me giggle this morning with the expressions you use. I love, love, love them! OY VEY is one that I use when I mad at myself for making goofy mistakes. And yes you nailed it again, the visuals of your food look soooooo good. I have a question for you. What oil do you use when popping popcorn? I have been using canola oil and it seems to be upsetting my tummy:(

I used to eat popcorn every day…and then I forgot about it. Your popcorn concoction looks YUM! Cannot wait to se what it is.
Oh man, I feel you on the late night dinners! That’s often the case for me if I something to do in the evening because I usually can’t eat anything that everyone else is eating so I wait until I get home. So that obvi means lots of snacking in between! That soup looks especially delicious as do those popcorn balls! Yum!
